Baked Cilantro Lime Salmon with Avocado Salsa

This baked cilantro lime salmon is quick, easy & healthy! It’s made by bathing the salmon in a tangy cilantro lime mixture then baking to succulent perfection! Top it with a flavorful avocado salsa for a nourishing & delicious dinner!

There’s no easier, healthier or more satisfying entrée than baked salmon. (After creating my Baked Salmon with Avocado & Feta recipe – I knew I had to make a similar version.) This baked cilantro lime salmon with avocado salsa is quickly becoming a favorite! It’s a rewarding dish that tastes gourmet but is so easy to put together!

Not only does it come together in less than 30 minutes but it’s bursting with vibrant flavors and zesty ingredients! My favorite part? The avocado salsa! It’s creamy, decadent and reminds me of a “deconstructive guacamole” if you will. I love how it compliments the citrusy salmon and makes this dish incredibly satisfying.

Ingredients You’ll Need

Salmon: Try using salmon fillets that are similar in size so they finish baking around the same time. Salmon fillets with and without the skin both work for this recipe! (I prefer using salmon fillets without the skin for ours.)

Limes: I usually use 2-3 limes for this dish, depending on their size and how juicy they are. You’ll be using some juice to coat your avocado salsa and the juice AND zest to brush over the salmon.

Olive oil: We use Extra Light Tasting Olive Oil for ours. (You’ll be brushing the salmon with an oil and lime mixture to keep them moist while baking.)

Cilantro: Chopped cilantro is used in both the lime/oil mixture for brushing and the avocado salsa. (Use the leaves and stems are maximum flavor!)

Avocado: Look for avocados that are ripe or slightly under ripe for the best results. (They’ll hold up better to rest of the salsa ingredients once it’s all mixed together.)

Tomatoes: Any type of tomatoes work for this recipe. I love using grape or cherry tomatoes for their flavor but larger tomatoes can be used instead.

Red onion: Red onion works the best for this recipe. (It’s more mild in flavor that white or yellow onion.) I just love the crunch it adds to the salsa!

Spices: Smoked paprika, salt and black pepper are needed to season your salmon. (Feel free to use as much as you like!) You’ll also be lightly seasoning the avocado salsa with salt and black pepper to bring out it’s flavors.

How To Make Baked Cilantro Lime Salmon

1. Prep the oven. Turn your oven on to 400 degrees and spray a baking dish with non-stick cooking spray.

2. Make the salsa. Mix the diced avocado, tomatoes, red onion and cilantro together in a small bowl. Squeeze lime juice over the top and season with salt and black pepper to taste. (Taste and adjust the lime juice or seasonings as needed.) Cover and refrigerate while you prepare the salmon.

3. Prepare the salmon. Pat the salmon fillets with a paper towel to remove any excess moisture and place them in your prepared baking dish. Whisk the olive oil, lime juice, lime zest and chopped cilantro together and brush the mixture over each fillet. Season each fillet with smoked paprika, salt and black pepper to your liking.

4. Bake! Bake for 10-12 minutes or until the salmon is cooked through and flakes easily with a fork.

5. Serve. Serve immediately with the avocado salsa spooned over each fillet.

For the salmon:
