Roasted Chipotle Salmon with Peach Salsa

Fresh salmon fillets are seasoned with smoky chipotle spices then roasted until flaky & topped with the best homemade peach salsa! This roasted chipotle salmon recipe is a little sweet, spicy & perfect for an easy dinner!

For the chipotle salmon:

  • 4 salmon fillets (without skin)
  • 1 tsp chili powder
  • ½-1 tsp chipotle powder (depending on how spicy you want it)
  • ½ tsp paprika
  • ¼ tsp garlic powder
  • ½ tsp salt
  • Extra lime wedges, for serving

For the peach salsa:

  • 2-3 peaches, pitted & diced
  • ¼ of a red onion, finely chopped
  • 2 Tbsp cilantro, chopped
  • ½ of a jalapeno. deseeded & finely chopped
  • 2-3 limes, juiced (or enough to coat the salsa)
  • Salt, to taste
  • Black pepper, to taste


To make the peach salsa:

  • Mix your peaches, onion, cilantro, jalapeno and lime juice together in a bowl then season it with salt and pepper to taste. (Taste and adjust your seasonings accordingly.) Then cover the salsa and place it in the refrigerator to chill.

To make the chipotle salmon:

  • Preheat your oven to 400 degrees. Then spray a baking dish with cooking spray and place your salmon fillets in the dish. (If using salmon fillets with skin, place your fillets in the dish skin side down.)
  • Next mix your chili powder, chipotle powder, paprika, garlic powder and salt together in a bowl and sprinkle it evenly over each salmon fillet.
  • Then place the dish in the oven and roast for 10-11 minutes (depending on the size of your fillets. The salmon should flake easily with a fork once it's done.)
  • Serve your salmon immediately with extra lime wedges and your peach salsa.


*Peach salsa is best served cold so I would recommend chilling it for at least 10-20 minutes if possible.
