I’ve been having a moment with chimichurri lately & these chicken bowls are 👌🏻 so good! The base is a white rice & spinach mixture topped with roasted butternut squash & zesty marinated chicken then drizzled in the best chimichurri sauce!🫶🏻 (We top ours with goat cheese & roasted pepitas for a little extra flavor & crunch!😉)
They’re perfect for meal prep & loaded with flavor!🤗

GUACAMOLE CHICKEN SALAD!😍

This is one of my favorite lunches to make during the week & its sooo good!🤗 Shredded chicken is mixed with lots of mashed avocado & the usual guacamole mix-in’s then seasoned with garlic salt & pepper to taste.👌🏻 You can serve it with tortilla chips (my personally favorite 😉), wrap it up in a tortilla or eat it by the spoonful!

BAKED GREEK SHRIMP SKILLET WITH FETA!😍

This is my take on shrimp saganaki.🤗 A classic Mediterranean dish made with shrimp cooked in a spicy tomato sauce topped with feta cheese! (I added olives because we’re obsessed.😉) It’s an easy one pot dish made in less than 30 minutes! Serve it with warm crusty bread or over rice with veggies for a full meal!👌🏻

PARMESAN ROASTED ASPARAGUS with TOMATOES & BALSAMIC!😍

I feel like asparagus is one of those veggies that gets no love…😂 (I even hated it as a child.🫢) But now it’s one of my favorite veggies & this is such a yummy way to serve it! Tender asparagus is topped with a thick layer of melty parmesan cheese, roasted tomatoes & garlic then sprinkled with fresh basil & a drizzle of balsamic!🤤 It’s quick, easy & SOOO GOOD!🤗

Let’s file this one under “Might not look pretty but tastes AMAZING!”😂 We’ve made this dish at least 4-5 times since first testing it & it’s so good! Loaded with ground turkey, black beans, chiles & lots of spices then topped with a layer of melty cheddar cheese!🤤 You can serve it with chips, spoon it over rice or stuff it into corn tortillas for a tasty taco filling!🤗

The perfect Christmas morning breakfast!🤗 I made one for Charlie & I last year & it was so good! And so easy too! Just assemble, let it sit in the fridge overnight then pop it in the oven to bake while you open presents!🎁 It’s sweet & custard-like in the center with pops of fresh blueberries & the best crispy topping!🤤
(Sometimes I’ll add a sprinkle of cinnamon sugar to the top so it caramelizes while baking - soooo good!😉)

Paprika Shrimp with Lemon Whipped Feta Dip🍋
1lb. raw shrimp, peeled & deveined
1½ tsp paprika
½ tsp dried dill
½ tsp sat
¼ tsp garlic powder
¼ tsp cayenne (optional)
Black pepper, to taste
.
Lemon Whipped Feta Dip: 4oz. feta cheese + ½ cup plain greek yogurt + 1½ Tbsp fresh lemon juice + ¼ tsp dried dill + 1 small garlic clove + black pepper, to taste
.
1. Blend your whipped feta ingredients together in a food processor until smooth. Then store it in the refrigerator once done.
2. Mix your paprika, dill, salt, garlic powder, cayenne & black pepper together. Then pat your shrimp dry with a paper towel & toss them in your spice mixture.
3. Cook the shrimp over medium high heat for 1-3 minutes per side or until they’re cooked all the way through. (You may need to do this in batches.)
4. Remove your shrimp from the pan & place them on a serving tray.
5. Squeeze a little lemon juice over the top & serve with your feta dip.

Paprika Shrimp with Lemon Whipped Feta Dip🍋 1lb. raw shrimp, peeled & deveined 1½ tsp paprika ½ tsp dried dill ½ tsp sat ¼ tsp garlic powder ¼ tsp cayenne (optional) Black pepper, to taste . Lemon Whipped Feta Dip: 4oz. feta cheese + ½ cup plain greek yogurt + 1½ Tbsp fresh lemon juice + ¼ tsp dried dill + 1 small garlic clove + black pepper, to taste . 1. Blend your whipped feta ingredients together in a food processor until smooth. Then store it in the refrigerator once done. 2. Mix your paprika, dill, salt, garlic powder, cayenne & black pepper together. Then pat your shrimp dry with a paper towel & toss them in your spice mixture. 3. Cook the shrimp over medium high heat for 1-3 minutes per side or until they’re cooked all the way through. (You may need to do this in batches.) 4.
