CRISPY CAJUN CHICKEN SALAD WRAPS with CAJUN LEMON-PARMESAN DRESSING!🔥

Easy, delicious & packed with protein! Whenever I want a quick & easy lunch, it usually involves some sort of wrap. These spicy chicken wraps have been a HUGE hit lately!👌🏻

I used @justbareofficial Lightly Breaded Chicken Breast Bites for these & all I can say is WOW! They’re super crispy & tender + no preservatives or antibiotics & 16g of protein per serving! (Definitely keeping a bag of these stocked in the freezer now.😉) Plus I love that I can throw them on the air fryer & have a healthy delicious meal ready in less than 10 minutes! #ad #BareTastesBetter

Find them at a local store near you!

Full recipe is below.⬇️

For the Crispy Cajun Chicken Salad Wraps:
1 bag of Just Bare Lightly Breaded Chicken Breast Bites
1 head of romaine lettuce, chopped
1 large avocado, diced
Handful of grape tomatoes, sliced
Shredded parmesan
Burrito-size flour tortilla

For the Cajun Lemon-Parmesan Dressing:
¼ cup plain Greek yogurt
¼ cup mayonnaise
2 Tbsp lemon juice
1 tsp lemon zest
2 Tbsp olive oil
1 tsp cajun seasoning
1 garlic clove, minced
1 worcestershire sauce
Cracked black pepper, to taste

1. Cook the chicken bites in the air fryer at 350 degrees for 8-10 minutes (or until crispy). Cut the bites in half (or thirds) once done and set aside.

2. Whisk the dressing ingredients together in bowl. Taste and adjust the black pepper, if needed.

3. Add the chopped chicken bites, lettuce, avocado, tomatoes and parmesan to a large bowl. Pour your desired amount of dressing over the top and toss until the salad is coated to your liking.

4. Place the salad in the middle of the tortilla. (Try not to overstuff it.) Bring the left and right edges of the tortilla inward then pull the bottom flap up and over the filling, tucking the edge tightly around the salad. Finish rolling until it’s completely wrapped with the seam side facing down.

5. Place the wrap seam-side down in a hot skillet for a minute to toast and lock the shape.

6. Serve with extra dressing on the side.

BBQ Shredded Beef with Apple Cider Glazed Brussel Sprouts & Roasted Sweet Potatoes🔥

Comfort food in a bowl!😉 We live out of our crockpot during this time of year & this bbq shredded beef is one of our favorites. It’s smoky, flavorful, comes together in around 10 minutes & cooks low and slow.🤗
Last night we served it with my favorite roasted sweet potatoes & apple cider glazed brussel sprouts - the brussels sprouts were UNREAL! They’re sweet, tangy & have the best charred crispy bits. Highly recommend giving them a try!👌🏻

Comment “Beef” below⬇️ & I’ll send you the recipe for my Crockpot BBQ Shredded Beef.

All other recipes are below.⬇️

Roasted Sweet Potatoes:
2 medium sweet potatoes
Avocado oil (or olive oil)
Salt, to taste
Cracked black pepper, to taste

1. Preheat oven to 400 degrees & line a baking pan with parchment paper.
2. Cut the ends off the sweet potatoes & cut each potato in half length-wise. Gently poke the potatoes a few times with a fork.
3. Rub the potatoes all over with avocado oil & season both sides with salt & black pepper.
4. Place the seasoned potatoes cut side down on your prepared pan & roast for 25-35 minutes depending on their size.

Apple Cider Glazed Brussel Sprouts:
1½ lbs. brussel sprouts, ends trimmed off & cut in half
1 Tbsp avocado oil (or olive oil)
½-¾ tsp salt (or to taste)
½ tsp black pepper
¼ cup apple cider
¼ cup apple cider vinegar
2 Tbsp maple syrup

1. Toss the brussel sprouts with the avocado oil, salt & black pepper. Arrange them cut side down on a baking pan lined with parchment paper. Roast at 425 degrees for 20-25 minutes.
2. Whisk the apple cider, apple cider vinegar & maple syrup together in a small pot on the stove.
3. Bring it to a boil over medium heat & let it simmer for 5-8 minutes, stirring occasionally. (Or until the sauce is thick enough to coat the back of a spoon.)
4. Transfer the glaze to a glass container to cool.
5. Once the brussel sprouts are done, toss them in the glaze and serve.
