BLACK BEAN CORN & AVOCADO SALSA!🤗

🎶Nothing’s gonna stop me🎶 from eating all the Spring & Summer things!😂 (Even though it’s been wet & rainy here lately…🫠) But this black bean corn salsa is always a hit! Loaded with veggies, hearty black beans, creamy avocado, lots of lime juice & a hint of cayenne for some spice!👌🏻 You can serve it with chips, add it to your tacos/nachos or eat it by the spoonful - it’s so good!😍

Bright, zesty & perfect for a weeknight meal!🤗 If you love pasta salad then you HAVE to give this one a try! I used @wildplanetfoods albacore tuna for mine because it’s sustainably sourced, firm in texture & has 21 grams of protein per serving!💪🏻 (It’s such a great way to add some extra protein to your meals!😉) Mixed it with pasta, fresh veggies, lots of feta cheese, basil & all tossed in a simple lemon-dijon vinaigrette!👌🏻 It’s soo good!

I’m always looking for ways to switch up my tuna salad game & this Mediterranean-style salad was delicious!🤗 It’s a no-mayo tuna salad that’s loaded with veggies & packed with flavor! (Making it perfect for a healthy weeknight dinner!😉) I used @wildplanetfoods albacore tuna for mine because it’s sustainably caught, there’s no additives AND it has a whopping 21g of protein per serving!💪🏻 Mixed it with lots of veggies & tossed in a zesty dill vinaigrette - it was soo good!👌🏻
You can eat it as is, serve it with your favorite crackers or top it over a bed of greens!

I’ve been having a moment with chimichurri lately & these chicken bowls are 👌🏻 so good! The base is a white rice & spinach mixture topped with roasted butternut squash & zesty marinated chicken then drizzled in the best chimichurri sauce!🫶🏻 (We top ours with goat cheese & roasted pepitas for a little extra flavor & crunch!😉)
