BBQ Shredded Beef with Apple Cider Glazed Brussel Sprouts & Roasted Sweet Potatoes🔥

Comfort food in a bowl!😉 We live out of our crockpot during this time of year & this bbq shredded beef is one of our favorites. It’s smoky, flavorful, comes together in around 10 minutes & cooks low and slow.🤗
Last night we served it with my favorite roasted sweet potatoes & apple cider glazed brussel sprouts - the brussels sprouts were UNREAL! They’re sweet, tangy & have the best charred crispy bits. Highly recommend giving them a try!👌🏻

Comment “Beef” below⬇️ & I’ll send you the recipe for my Crockpot BBQ Shredded Beef.

All other recipes are below.⬇️

Roasted Sweet Potatoes:
2 medium sweet potatoes
Avocado oil (or olive oil)
Salt, to taste
Cracked black pepper, to taste

1. Preheat oven to 400 degrees & line a baking pan with parchment paper.
2. Cut the ends off the sweet potatoes & cut each potato in half length-wise. Gently poke the potatoes a few times with a fork.
3. Rub the potatoes all over with avocado oil & season both sides with salt & black pepper.
4. Place the seasoned potatoes cut side down on your prepared pan & roast for 25-35 minutes depending on their size.

Apple Cider Glazed Brussel Sprouts:
1½ lbs. brussel sprouts, ends trimmed off & cut in half
1 Tbsp avocado oil (or olive oil)
½-¾ tsp salt (or to taste)
½ tsp black pepper
¼ cup apple cider
¼ cup apple cider vinegar
2 Tbsp maple syrup

1. Toss the brussel sprouts with the avocado oil, salt & black pepper. Arrange them cut side down on a baking pan lined with parchment paper. Roast at 425 degrees for 20-25 minutes.
2. Whisk the apple cider, apple cider vinegar & maple syrup together in a small pot on the stove.
3. Bring it to a boil over medium heat & let it simmer for 5-8 minutes, stirring occasionally. (Or until the sauce is thick enough to coat the back of a spoon.)
4. Transfer the glaze to a glass container to cool.
5. Once the brussel sprouts are done, toss them in the glaze and serve.

Maple Mustard Glazed Salmon with Roasted Butternut Squash & Garlic Sautéed Green Beans with Crispy Shallots✨

Another easy salmon recipe my family loves!🥰 We always keep this one in our weekly dinner rotation. It’s quick (only takes 15 minutes!), delicious & has the BEST sweet & tangy maple-dijon glaze.
Last night we served them with some roasted butternut squash & garlicky green beans - the flavors were UNREAL! (Highly recommend drizzling the sauce over your butternut too - wow!👌🏻)

Comment “Salmon” below⬇️ & I’ll send you the recipe for my Maple Mustard Glazed Salmon.

Roasted Butternut Squash:
1 small butternut squash, peeled & diced (about 3 heaping cups)
1 Tbsp avocado oil (or olive oil)
Salt, to taste
Cracked black pepper, to taste

1. Preheat the oven to 425 degrees & line a baking sheet with parchment paper.
2. Toss the squash with avocado oil & generously season with salt & black pepper.
3. Arrange the squash on the prepared baking sheet & roast for 25-30 minutes. (I usually check the squash around 20 minutes to see how much longer they’ll need.)

Sautéed Green Beans with Crispy Shallots:
1 lb. green beans, end trimmed off
3 garlic cloves, minced
2 large shallots, sliced
2 Tbsp olive oil (plus more to sauté the beans)
Seasoned salt, to taste
Cracked black pepper, to taste

2. Heat 2 Tbsp olive oil in a sauté pan over medium heat. Add the shallots & sauté for 5 minutes. Reduce the heat to low & continue cooking for 3-4 minutes or until they’re golden. Use a slotted spoon to transfer the shallots to a paper towel lined plate. Season with a pinch of salt & set aside to cool.
3. Add another splash of olive oil to a large sauté pan & heat over medium-high heat.
4. Add the green beans & garlic. Stir & sauté for 2-3 minutes until the garlic is golden & the beans are warm. Season with seasoned salt & black pepper to taste.
5. Top the green beans with crispy shallots.
