Looking for a quick & easy meal?! This delicious pasta dish is made with one of Taylor Farm’s brand new pasta kits making it fast, simple and loaded with flavorful!

Quick and easy sun dried tomato shrimp topped over lemon basil pesto pasta! It's the perfect meal for a simple weeknight dinner!

I feel like we all need a few go-to recipes for when we’re pressed for time (or feeling lazy 😉 ) and just want a really good, simple weeknight meal. Well loves, now you can add this tasty sun dried tomato shrimp with lemon basil pesto pasta to your dinner rotation! It’s made by using a pre-packaged pasta kit that’s loaded with veggies and is topped with an incredibly flavorful shrimp dish that takes just minutes to cook!

Ingredients

  • Shrimp: I used frozen shrimp for this recipe. Just leave them out to thaw for 10-15 minutes then peel and devein them. (I just left the tails on in my pictures to make the dish look pretty. 😉 )
  • Lemon
  • Garlic
  • Butter
  • Sun dried tomatoes in oil: Adds so much flavor to your shrimp and compliments the lemon basil pesto so well!
  • Salt & paprika: Used to season the shrimp.
  • Taylor Farms Lemon Pesto Meal Kit: Makes cooking this meal so easy because the veggies, pasta and sauce it already premade!
Taylor Farms now has new Lemon Pesto meal kits! They come with fresh already cooked linguine noodles, crisp broccoli, cauliflower and carrots and a delicious lemon basil pesto sauce!

What comes in the Taylor Farms Lemon Pesto Pasta Kit?

If you know me, then you know that I usually don’t prefer too many pre-made/store bought meals. (Those frozen tv dinner type of meals are just not my cup of tea.) BUT I’ve always been a HUGE fan of all of Taylor Farm’s products because they’re super tasty, so easy, and their ingredients always seem so fresh too! So this go-around I tried their brand new Lemon Basil Pesto Pasta kit and was seriously shocked at how much I loved it! The veggies were fresh, the pasta was tender and I was able to have dinner on the table in less than 10 minutes! Here’s what you’ll find in each kit:

  • Precooked pasta: I was a little iffy about this at first but after heating it up in the microwave and adding it to the rest of my ingredients it was absolutely perfect. The noodles weren’t slimy or super al dente like a few other premade pastas that I’ve had. (And I actually loved the fact that I didn’t have to boil any water for them either. 🙂 )
  • Veggies: This kit came loaded with broccoli, cauliflower and carrots! Which made the veggie lover in very VERY happy! Plus they were all cut small enough so they didn’t take forever to cook either.
  • Lemon basil pesto: I loved this sauce! It was the perfect combination of tangy and herby and paired so well with the rest of the ingredients!
  • Parmesan cheese: If you’re a cheese lover like me, then you’ll probably want to add a little extra cheese. But just having that little bit of parm that comes with the kit totally tied the whole dish together!

A delicious 10 minute meal made with pesto pasta, sauteed shrimp, fresh seasonal veggies and a sprinkle of parmesan cheese! It's fast, healthy and so easy to make!

How to make lemon pesto pasta from the kit

  1. Heat a large skillet over medium high heat and spray it with non-stick cooking spray. Once it’s hot, add the veggies and cook until they’re slightly tender. (About 5-6 minutes)
  2. While the veggies are cooking, cut the pasta package open and place it in the microwave. Heat the pasta for 1 minute or until it’s warmed throughout.
  3. Once the veggies are tender, add your pasta and mix them together. Then add your sauce and toss the pasta to make sure everything is fully coated.
Sun dried tomato shrimp is an easy simple dish made with chopped sun dried tomatoes, garlic, lemon and a little bit of butter! It's full of flavor and pairs so well with your favorite pasta dish!

How to make sun dried tomato shrimp

  1. Heat a large saute pan over medium high heat. While the pan is heating, mix the minced garlic, lemon and butter together in a small bowl and set it aside. Then place your shrimp in a large ziploc bag and season them with salt and paprika. Shake the bag to make sure they’re completely coated with your seasonings. Once the pan is hot, spray it with non-stick cooking spray and add your shrimp.
  2. Cook the shrimp for 2 minutes on one side then flip them. Once flipped, pour your lemon/garlic mixture into the pan and cook for 1-2 more minutes or until the shrimp are cooked all the way through. Add your chopped sun dried tomatoes to the pan and let them warm up a little bit in the sauce. 
  3. Take the pan off the burner and pour your shrimp over the pasta. Serve immediately!

Sun Dried Tomato Shrimp with Lemon Basil Pesto Pasta

Tender shrimp are tossed in a flavorful sun dried tomato sauce and then topped over an easy pesto pasta that's loaded with veggies! This is one simple meal you'll want to make again and again!

Ingredients

  • 1 lb. shrimp, peeled and deveined
  • 4 garlic cloves, minced
  • 3 Tbsp fresh lemon juice
  • 1 Tbsp butter, melted
  • ¼ tsp salt
  • 1 tsp paprika
  • 1 4oz. jar sun dried tomatoes in oil, drained and chopped
  • 1 package Taylor Farm's Lemon Basil Pesto kit
  • Extra lemon & parmesan, for serving

Instructions

  • Heat the pasta and veggies according to the kit's directions and toss them with the sauce as directed. Leave the warmed pasta in your saute pan while you prepare the shrimp.
  • Heat a large separate saute pan over medium high heat. While the pan is heating, mix the minced garlic, lemon and butter together in a small bowl and set it aside. Then place your shrimp in a large ziploc bag and season them with salt and paprika. Shake the bag to make sure they're completely coated. Once the pan is hot, spray it with non-stick cooking spray and add your shrimp.
  • Cook the shrimp for 2 minutes on one side then flip them. Once flipped, pour your lemon/garlic mixture into the pan and cook for 1-2 more minutes or until the shrimp are cooked all the way through. Add your chopped sun dried tomatoes and let them warm up a bit in the sauce. Once warm, top the shrimp over your pasta and veggies.
  • Serve immediately with extra lemon and parmesan!

I’ll be honest, most days I’m a soft taco kind of girl through & through. But these babies definitely have me singing a different tune! They’re easy to make, baked instead of fried & are loaded with the best citrus marinated chicken too!🤗 (And let’s not forget about that sauce because holy moly - it’s a winner!😉)

Chicken Carnitas Tacos🌮
1 lb. chicken thighs (boneless & skinless)
2 oranges, juiced
1 lime, juiced
4 garlic cloves, minced
2 Tbsp cilantro, chopped
1 jalapeño, deseeded & finely chopped
1 Tbsp olive oil
1 Tbsp oregano
1 tsp cumin
1 tsp salt
1/4 tsp pepper
1/2 tsp paprika
Corn tortillas
Red onion, chopped
Cheese
Avocado Cilantro Lime Sauce: Blend together 1 avocado + 1/4 cup cilantro + 2 garlic cloves + 2 Tbsp lime juice + 1/4 tsp salt

1. Combine your marinade ingredients & pour them to a plastic bag with your chicken thighs. Marinate for at least 30 minutes. Then place your chicken in a baking dish & bake at 400 degrees for 20 minutes. Shred the chicken once it’s done.
2. Next, place your tortillas on a baking sheet lined with parchment paper & spray them with avocado oil. Bake the tortillas at 400 degrees for 2 minutes. Then take them out of the oven & layer one side with cheese, shredded chicken & red onion. Fold the other side over the top & bake your tacos for 10-12 more minutes (or until crispy).
3. Serve immediately with your sauce & favorite toppings!

Chocolate Peanut Butter Crunch Bars🍫🥜
3 cups rice cereal (use gluten free if needed)
3/4 cup + 2 Tbsp peanut butter
2-4 Tbsp honey (depending on how sweet you want them)
Chocolate layer: 1 1/4 cups chocolate chips + 2 Tbsp peanut butter

1. Line an 8x8 pan with parchment paper & set it aside. Then mix your peanut butter & honey together & pour it over your rice cereal. Mix the two together until fully combined & press your rice crispies into your prepared pan.
2. Next, heat your chocolate chips & 2 Tbsp of pb together in the microwave at 30 second intervals until completely melted. Then pour it over your cereal layer. 
3. Place the pan in the fridge until the chocolate has set. Cut & serve immediately!

Smoked Salmon Sushi Roll Ups🍣
8oz. smoked salmon
1/2 cup whipped cream cheese
2 Tbsp green onion, chopped
2 tsp lemon zest
1 tsp lemon juice
1/3 of a cucumber, sliced into thin strips
1/2 an avocado, sliced into thin strips
1 Tbsp EBTB seasoning

Lemon-Soy Sauce: 2 Tbsp soy sauce + 2 Tbsp lemon juice + 1 Tbsp water + 1 Tbsp mirin + 1 Tbsp sliced green onion
.
1. Place a piece of plastic wrap on the counter & sprinkle it with your EBTB seasoning. Then layer your smoked salmon over the seasoning to form a small rectangle.
2. Next mix your cream cheese, green onion, lemon juice & zest together & spread it over your smoked salmon.
3. Place your avocado & cucumber strips in the center of the rectangle & use your plastic wrap to help you roll it up.
4. Place your salmon roll in the freezer for 10-15 minutes. Slice & serve it with your soy sauce!

Anyone else been having a moment with citrus lately or is that just me?!🙋🏼‍♀️ Also is anyone else completely baffled by all the different types of citrus we have now too??🤯 I was walking around @sprouts the other day & must have seen at least 10 different varieties! (Which is probably why I love shopping there during citrus season tbh.😉) Like these vintage heirloom navel oranges - they’re a little sweeter & easier to peel than most oranges which makes them perfect for snacking or adding to salads! And if you’re going to have a fruit salad - make this one! It’s sweet, a little tart, so easy & so refreshing too!🤗

Winter Fruit Salad🍊
Oranges, peeled & chopped
Strawberries, halved
Kiwis, peeled & quartered
Blueberries
Pomegranate seeds
Orange Poppy Seed Dressing: 1/4 cup orange juice + 1 1/2 tsp honey + 1/2 tsp poppy seeds
.
1. Add all of your fruit to a bowl & drizzle your dressing over the top. Toss your salad until everything is coated.
2. Keep it chilled in the fridge until you’re ready to serve!
