Only 4 INGREDIENTS & SO EASY! These peanut butter rice krispie ice cream sandwiches are a classic summer dessert you’re going to love!

Peanut butter. Rice Krispie. Ice cream sandwiches…need I say more?! These are the BEST summer dessert! Layers of slightly sweetened peanut butter rice krispie treats are sandwiched around your favorite chocolate chip ice cream for the most delicious summer treat! And the best part? They’re only 4 ingredients!
So simple, so easy and made with healthier ingredients! The original recipe came from Charlie’s mom when we first started dating and I’ve slightly tweaked it over the years. Instead of corn syrup, we’re using honey to naturally sweeten the rice krispies making this a healthier dessert that still tastes so decadent!
We love serving these for a fun 4th of July dessert!

Ingredients For Your Ice Cream Sandwiches
Rice Krispies: Used as the base for your “sandwich” layers! (Gluten free rice cereal can be used instead.)
Peanut butter: Any type of peanut butter works for this recipe! (See the “Variations” section for more ideas!)
Honey: Adds the right amount of sweetness!
Ice cream: We use classic vanilla or chocolate chip ice cream for ours! (See the “Variations” section for more ideas!)


How To Make Peanut Butter Rice Krispie Ice Cream Sandwiches
1. Make the bottom layer. Mix a ¾ cup + 2 tablespoons of peanut butter + 2 tablespoons honey together in a large bowl. Then add 4 cups of your rice krispies and mix until fully combined. Press the mixture into the bottom of a 9×13″ pan and place it in the freezer until firm. (About 15-30 minutes)
2. Add your ice cream. Remove the pan from the freezer and spread your softened ice cream over the frozen rice krispie layer. Place the pan back in the freezer until the ice cream is slightly firm. (About 30 minutes)
3. Make the top layer. While the ice cream is freezing, mix your remaining ¾ cup + 2 tablespoons of peanut butter + 2 tablespoons honey together. Then stir in your remaining 4 cups of rice krispies and set it aside.
4. Assemble & freeze. Pour your second batch of rice krispies over the ice cream layer and pat them down to form an even top layer. Place the pan back in the freezer and freeze until firm. (About 1-2 hours)
5. Serve! Cut your ice cream sandwiches into large squares and serve immediately.
Note: We prefer freezing each layer to keep the ice cream from melting too much while assembling. If your ice cream is too soft is can either melt into the bottom layer or the top layer will sink into it.

Variations
Swap out the peanut butter! Use your favorite nut butter OR a flavored peanut butter instead! (Chocolate peanut butter is fantastic with this.)
Switch up the ice cream! Use your favorite ice cream instead! Chocolate, fruity ice creams…the sky is the limit!
Make chocolate dipped ice cream sandwiches! Cut your sandwiches into smaller rectangles and refreeze them until firm. Then melt 12 ounces of chocolate chips + 1 tablespoon of coconut oil together in the microwave. Dip your frozen sandwiches halfway in the chocolate and place them on a tray lined with parchment paper. Freeze again and enjoy!

Storing
Whole pan: Cover the entire pan with plastic wrap and keep it stored in the freezer.
Individual sandwiches: Cut your dessert into squares and wrap them individually in plastic wrap. Keep them stored in the freezer for an easy summer dessert!
