Brussel sprouts are one of those tricky veggies where you either love them or hate them. But over the years I feel like they’ve slowly become more popular on the foodie scene. (Which makes me so excited!) Brussel sprouts are one of my favorite fall veggies – they’re healthy yet hearty and pair so well with a variety of seasonings and sauces, especially anything that’s sweet and salty! One of my favorite sweet and salty combos has to be these maple balsamic roasted brussel sprouts!
Crispy oven roasted brussel sprouts + tart cranberries and creamy goat cheese all tossed in a sweetened maple balsamic sauce…how incredible does that sound?! Finish them off with toasty warm pecans and you’ve got yourself a flavor-packed healthy side dish. They’re perfect for any occasion too! Serve them for dinner parties, Thanksgiving, Christmas or even as a fun appetizer – everyone’s going to love them!

Ingredients You’ll Need
Brussel sprouts: Look for smaller brussel sprouts for the best results. (They take less time to roast!)
Dried cranberries: Use as little or as much as you’d like! They add a tart and subtle sweetness to the dish.
Goat cheese: This creamy spreadable cheese pairs perfectly with the sweet and savory notes of this dish. (I always suggest buying a log of goat cheese instead of store bought crumbled goat cheese. It’s smoother in texture and has better flavor!)
Pecans: Finish the dish with chopped toasted pecans! (Toasting the pecans is so easy and brings out their natural flavor.)
Olive oil: You’ll need one tablespoon of olive oil to roast the brussel sprouts. (Avocado oil can be used instead.)
Maple syrup: The main component of the sauce! Always use pure maple syrup for the best results.
Balsamic vinegar: Any type of balsamic vinegar works for this dish!
Dijon mustard: Smooth dijon mustard works the best for this recipe. It’s sharp bite helps balance the sweet and savory flavors in the sauce.
Spices: Salt and black pepper are all you need to season the brussel sprouts.



How To Make Maple Balsamic Brussel Sprouts in the Oven
1. Toast the pecans. (This step is optional but really brings out the pecans’ natural nutty flavor.) Spread the pecans out on a baking pan lined with parchment paper. Bake at 375 degrees for 5-6 minutes or until fragrant. Roughly chop the pecans once done and set aside.
2. Preheat the oven. Turn the oven on to 425 degrees and grab a separate baking pan.
3. Prep the brussel sprouts. Trim the bottom off eash brussel sprout and discard any wilted leaves. Cut the brussel sprouts in half (larger brussel sprouts may need to be cut into quarters) and add them to a large bowl. Toss the sprouts with olive oil, salt and black pepper.
4. Roast. Spread the brussel sprouts out on the baking pan, arranging them so they’re cut side down. Roast in the oven for 20-25 minutes or until they’re just tender.
5. Make the sauce. While the brussel sprouts roast, whisk the maple syrup, balsamic vinegar and dijon mustard together.
6. Toss. Once the brussel sprouts are done, add them to a bowl with dried cranberries and goat cheese. Drizzle the sauce over the top and toss until the sprouts are coated to your liking.
7. Serve! Serve immediately with chopped pecans sprinkled over the top.

Variations
Switch up the nuts! Walnuts, pistachios or even pepitas are all great alternatives! (Try candied nuts for a sweeter dish!)
Replace the cranberries! Fresh pomegranate arils or chopped dates would be delicious replacements!
Add bacon to the mix! Crumbled bacon bits make everything better!
Swap out the maple syrup! Use the same amount of honey instead.
