Grilled salads seem to be all the rage right now – and I’m so here for it! (Especially since grilling sesaon is right around the corner!😉) Are they worth the hype?! 100% yes! That little bit of char from the grill just takes your salad over the top. And this grilled asparagus salad with lemon and feta is no exception!

Ingredients For Your Asparagus Salad

  • Asparagus: Use thicker asparagus for the best results. (They’ll stay intact better on the grill and won’t fall through the grates.)
  • Feta cheese: Always buy a block of feta and crumble it yourself! (It has much better flavor than store bought crumbled feta.)
  • Garlic: Two cloves of minced garlic are tossed with your asparagus before grilling!
  • Olive oil: You’ll need enough olive to coat your asparagus before grilling and to toss with your lemon juice to make the “vinaigrette”.
  • Lemon juice: You’ll need 1 tablespoon of fresh lemon juice for your “vinaigrette”!
  • Spices: Salt & black pepper are all you need to season your asparagus!

How To Make A Grilled Asparagus Salad

1. Prepare your asparagus. Snap the ends off your asparagus stalks and add the to a large bowl or tray. Then add 1 tablespoon of olive oil, your garlic, salt and pepper and toss unti the asparagus are fully coated.

2. Preheat your grill. Turn your grill on to medium-high (or heat a grill pan on the stove over medium-high heat). While the grill heats, rub olive oil over your grates so the asparagus won’t stick.

3. Grill your asparagus. Once hot, place your asparagus on the grill perpendicular to the grates so they don’t fall through. Cook your asparagus for 3-5 minutes or until they’re just tender. (Do not flip your asparagus! We’re only cooking them on one side.) Once done, remove them from the grill and set them aside to cool slightly.

4. Prepare your “vinaigrette”. While the asparagus cools, whisk your lemon juice and remaining 1 tablespoon of olive oil together in a bowl and set it aside.

5. Toss & serve! Once the asparagus is cool enough to touch, cut it into 3rd’s and add it to a large bowl. Then add your crumbled feta and drizzle your vinaigrette over the top. Toss the aparagus until they’re fully coated then serve immediately with a sprinkle of lemon zest (if desired).

Other Cooking Options

Don’t have a grill? No problem! You can easily make this asparagus salad by sautéing or roasting them instead!

  • Directions for sautéing: Prepare your asparagus according to the original directions. Then heat a sauté pan over medium-high heat and add a splash of olive oil once it’s hot. Add your asparagus to the pan and cook for 3-4 minutes on one side or until they’re just tender. (Don’t touch it or flip them over. You may need to do this in batches depending how much asaparagus you have.) Once done, transfer your asparagus to a cutting board and prepare the salad according to the original directions.
  • Directions for roasting: Prepare your asparagus according to the original directions. Then arrange them in an even layer on a baking sheet lined with parchment paper. Roast at 400 degrees for 10 minutes. Once done, prepare the salad according to the original directions.

I recommend using the sautéing method if you want to keep it close to the origianl grilled recipe. (You still get a little bit of char and golden brown pieces like when they’re grilled.)
