I come from a very “meat and potatoes” type of family – so pot roast was always on the menu growing up. It’s one of those classic comfort meals that feels like home no matter where you are. I can still remember the smell of it simmering all afternoon – the way the beef would fall apart with just a fork and how everyone always went back for seconds.

Now that I have my own kitchen, I’ve traded the oven for my beloved slow cooker. (Honestly, I may never go back!) This slow cooker pot roast takes everything I love about the traditional version and makes it even easier. The beef cooks low and slow until it’s melt-in-your-mouth tender, the veggies soak up all those savory juices and the whole house smells incredible by dinner time.

It’s the kind of easy crockpot dinner that’s perfect for busy weeknights and lazy weekends. (Or whenever you just need a little comfort in a bowl.😉) Simple ingredients, minimal prep and maximum flavor – this is the ultimate one-pot meal that brings everyone to the table.

Ingredients used to make slow cooker pot roast

Ingredients You’ll Need

Chuck roast: A classic choice for slow cooker pot roast! It’s marbled with just the right amount of fat to keep the beef juicy, flavorful and melt-in-your-mouth tender after hours of slow cooking.

Potatoes: Baby golden potatoes are the best! They’re naturally rich and buttery plus their smaller size is perfect for crockpot pot roast.

Carrots: Go for thicker carrots here – they hold up beautifully in the slow cooker and become tender without turning to mush. Baby carrots work too if you want to keep things extra easy – no cutting required!

Onion: Use yellow onion for the best results. While the roast cooks, the onions break down and add subtle sweetness that balances the rich beef flavor. (I like to quarter mine so they stay in big hearty pieces.)

Beef broth: Forms the base of your cooking liquid keeping everything moist and flavorful. (Try low sodium broth if you want more control over the seasoning.)

Garlic: Fresh garlic cloves are essential! They infuse the roast with a subtle, cozy garlic flavor that ties everything together.

Worcestershire sauce: A splash of worcestershire adds that deep, savory umami flavor that makes this pot roast taste so rich and cozy.

Seasonings: Dried thyme, dried rosemary, bay leaves, salt and black pepper are needed to season your pot roast. (Try using fresh thyme and rosemary for an extra special feel!)

How To Make Pot Roast In The Crockpot

1. Sear the roast. Pat the roast with paper towels to remove any excess moisture then generously season both sides with salt and black pepper. Heat a splash of olive oil in a large skillet over medium-high heat. Once hot, add the roast and sear for 3-4 minutes per side. Transfer the roast to the crockpot once it’s done.

2. Add the veggies. In the same skillet, add the sliced onion and sauté for 1-2 minutes. Then add the garlic and sauté for 30 seconds more or until the onions are slightly softened. Stir in the beef broth, Worcestershire sauce, dried thyme and dried rosemary and heat just long enough to scrape up any browned bits from the bottom of the pan. Pour the mixture over the roast in the slow cooker.

3. Cook. Layer the chopped carrots and potatoes over the onion layer and add 2 bay leaves. (At this point you can season the potatoes and carrots with salt and pepper again, if preferred.) Cover the pot and cook on low for 6-8 hours or high for 4-5 hours.

4. Serve. Once the roast is tender and falls apart easily, remove it and the veggies from the crockpot. Shred the meat using two large forks (discarding the fat), then plate it with the potatoes and carrots on a serving platter. Transfer the remaining juice from the slow cooker to a fat separator and pour some of the juice over the meat to keep it moist, if needed. Optional: Use the remaining juice to make homemade beef gravy! Serve immediately and enjoy.

Let’s Make Gravy!

I personally love using the juice from the pot as gravy to pour over the roast. However, if you prefer a thicker gravy we’ve got you covered! (My husband loves a thick gravy!) Here’s a simple way we make ours.

  1. Transfer about 1½ cups of the liquid from the slow cooker to a small saucepan and heat over medium-high heat.
  2. In a small bowl, stir together 2 tablespoons of cornstarch with 2 tablespoons of beef broth or water until a smooth milky liquid forms (this is called a slurry).
  3. Slowly whisk the slurry into the liquid in the saucepan. Bring it to a boil, then reduce the heat to maintain a simmer. Whisk continuously until thickened, about 2-3 minutes.
  4. Remove the gravy from the heat and season with salt and pepper to taste. Serve gravy over the beef and vegetables.

We like our gravy pretty thick – if you prefer a thinner gravy mix 2 tablespoons of cornstarch with 3 tablespoons of broth/water instead.

Serving Suggestions

This hearty dish doesn’t need much when it comes to sides. (It’s basically an all-in-one meal!) But if you’re hosting or cooking for a larger group, here are some easy side dish ideas to serve with it:

  • Salads: Try a simple green salad with oil & vinegar or my citrus pomegranate kale salad.
  • Veggies: Sauteed asparagus, green beans or roasted broccoli would all be delicious!
  • Extra carbs: Serve over steamed white rice or alongside warm rolls with butter
