Easy Sheet Pan Shrimp Fajitas

Sheet pan shrimp fajitas are a great option for an easy weeknight meal! They only take 15 minutes to cook, are super flavorful and there's hardly any clean up at all!

Fun fact: Whenever we go to a Mexican restaurant the first thing I look for on the menu is fajitas. (In all honesty it’s probably because they come out still sizzling and I just think that’s so cool. 😉 ) But I also love that you can do so much with them too. You can turn them into tacos, put them on a salad or even just eat them as is with some chips and salsa! And guess what loves?! Now you can make them at home too! With this easy recipe you can have a delicious and hearty dinner on the table in no time at all! So let’s get to making some sheet pan shrimp fajitas!

Easy sheet pan fajitas with only 4 ingredients! All you need is raw shrimp, bell peppers, onion and your favorite fajita seasoning!

Ingredients

Sheet pan meals are some of my favorite dishes to make because they’re so simple and only require a few key ingredients. (Plus – hello it’s all done in one pan so clean is super easy too!) Here’s what you’ll need to make these sheet pan fajitas.

  • Shrimp: Can be fresh or frozen. (I always keep my freezer stocked with frozen shrimp from Sprouts for a quick and easy meal. Plus they thaw in minutes too!)
  • Bell peppers: I like using a mixture of red, green and yellow because it makes such a pretty looking dish! 🙂
  • Red onion
  • Fajita seasoning: Can be homemade or your favorite store bought fajita seasoning. (Recipe for my homemade fajita seasoning is below. For store bought seasoning, I always get my spices/seasonings at Sprouts too because they have such a wide variety to choose from and most of their seasoning mixes are salt free! Their fajita mix is the best!)

My go-to homemade fajita seasoning

I’ve been using this spice mix recipe for years now and it hits the spot every single time! It’s a little spicy, full of flavor and goes great on just about anything! (Try it with chicken, fish, pork and even sauteed veggies!)

  • 1 Tbsp chili powder
  • 1½ tsp sea salt
  • 1½ tsp dried oregano
  • ¾ tsp onion powder
  • ¾ tsp garlic powder
  • ½ tsp cayenne pepper
  • ¾ tsp black pepper

Just pour all of these ingredients into a jar and shake it to mix them together. Now you have your own fajita seasoning to use whenever you want! 🙂

How do I serve sheet pan shrimp fajitas?

The great thing about this meal is that there’s so many different things you can do with it! (Which is great when you come from a family like mine where everyone always seems to want something different. 😉 ) Here are a few of my favorite ways to serve it!

  • Shrimp Fajita Salad: Top your shrimp fajitas over a bed of lettuce and serve it with avocado, fresh tomatoes, salsa and extra lime.
  • Tacos: Pack your fajitas into some warmed up tortillas and serve them with all of your favorite taco toppings!
  • Tostadas: Layer a crispy tostada shell with refried beans or guacamole, then add your fajitas with some chopped lettuce and your favorite salsa!
  • Burrito Bowls: Top your fajitas over a bowl of rice (or cauliflower rice) and add your favorite burrito toppings!
  • Nachos: Layer your fajitas on a bed of tortilla chips, sprinkle some cheese over the top and bake them until the cheese begins to melt. Then top it off with some salsa, guacamole and fresh tomatoes!

Ingredients

  • 1 lb raw shrimp, peeled and deveined
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • ½ of a red onion, sliced
  • 1 Tbsp + 1 tsp fajita seasoning (See below for my homemade fajita seasoning recipe)
  • Avocado oil spray (can be replaced with regular avocado oil or olive oil)

Instructions

  • Preheat oven to 400 degrees and line a large sheet pan with parchment paper.
  • Add the sliced bell peppers and onions to a bowl and spray them with your avocado oil spray (or drizzle with your oil) and toss them in 1 tsp fajita seasoning. Spread the veggies out on your sheet pan and bake them for 10 minutes.
  • Meanwhile, toss your shrimp in 1 Tbsp fajita seasoning. Once the veggies are done, place the shrimp on top of the peppers and onions and bake again for 6-8 minutes or until the shrimp are cooked all the way through.
  • Serve immediately with your favorite taco toppings!

Notes

My homemade fajita seasoning:
  • 1 Tbsp chili powder
  • 1½ tsp sea salt
  • 1½ tsp dried oregano
  • ¾ tsp onion powder
  • ¾ tsp garlic powder
  • ½ tsp cayenne pepper
  • ¾ tsp black pepper
Mix these ingredients together in a jar and store until you’re ready to use it.
