Best part about Halloween? Gotta be the treats! (They don’t call it trick-or-treating for nothing right?!) And these Halloween rice krispie treats have to be on your to-make list this year! Every year I’m on the look out for a new fun themed treat to make and these are definitely one of my favorites so far. They’re super easy to make, only require a handful of ingredients and are absolutely adorable too! (Charlie makes fun of me because I’m much more into the “cute scary” than “scary scary” when it comes to Halloween.) But I’d take a Halloween themed snack over a haunted hayride any day!

Ingredients used to make Halloween rice krispie treats

Ingredients for your rice krispie treats

  • Rice Krispie cereal: Used as the base of your rice krispie treat. (Gluten free krispie rie cereal can be used instead too!)
  • Peanut butter: Creamy peanut butter works the best for this recipe.
  • Maple syrup: Make sure to use the real stuff and not pancake syrup! (Pancake syrup is much thicker and has a completely different taste.)
  • Salt: Just a pinch is all you need! (Psst it helps bring out the rest of your flavors.)
  • White chocolate chips: Used for your coating.
  • Food coloring: I used neon food coloring for my treats and they came out great! (Regular food coloring can be used instead too.)
  • Candy eyes: You can usually find these at a craft store or Amazon has some great options too.

How to make Halloween rice krispie treats

  1. Prepare your pan. Line an 8×8 pan with parchment paper. Then set it aside.
  2. Prepare your ingredients. Add your rice krispies and salt to a large bowl then set it aside. Next, heat your peanut butter and maple syrup in pot on the stove over medium heat. Stir it until it’s smooth and the peanut butter has slightly melted. Then pour your peanut butter mixture over your rice krispies and mix them together until fully coated.
  3. Make your rice krispies & freeze. Press your rice krispie mixture into your prepared pan and place it in the freeze for 30 minutes. Once they’re firm, cut the rice krispies into 8 pieces and place them back in the freezer while you prepare the white chocolate.
  4. Make your chocolate coating! Heat your white chocolate chips and coconut oil in the microwave for 2 minutes (stirring at 30 second intervals) or until the chocolate has completely melted. (If the chocolate isn’t at your desired consistency you can always stir in a little more coconut oil to thin it out.) Then add 3 drops of your food coloring and stir.
  5. Decorate! Take one frozen rice krispie treat and dip it into your melted chocolate. Then place it on a tray lined with parchment paper and decorate it with candy eyes and sprinkles. Repeat with your remaining rice krispies.
  6. Refrigerate & serve. Place your decorated krispie treats in the fridge for a few minutes to set and serve!

Let the decorating begin!

Now comes the fun part! What to decorate them with?! I kept mine simple and opted for some candy eyes with green sprinkles for the “hair”. But here are a few other fun things you could use too!

  • Crushed oreos
  • Rainbow sprinkles
  • M&M’s, chopped or whole
  • Melted milk chocolate to draw on a mouth
  • Rolo candies attached on each side to make them look like Frankenstein

The options are limitless!

FAQ’s

  • Why did my rice krispie treats turn out soggy? This usually happens when there’s too much liquid/sticky mixture and not enough crispy cereal. To fix it, just stir in a little more of your cereal until you acheive the right consistency.
  • What can you use in place of marshmallows in rice krispie treats? Peanut butter and maple syrup are a fantastic replacement! They provide the stickness needed to hold your treat together and a touch of sweetness too!
  • What else can I use in place of white chocolate for the coating? Colored candy melts, milk chocolate or even dark chocolate chips would work too! (If using milk or dark chocolate – follow the same directions for melting as the white chocolate. If using candy melts – follow the directions on their packaging.)
  • How do I store my rice krispie treats? Place your treats in an air tight plastic container and keep them stored in the fridge.

Why you’ll love this Halloween dessert recipe

  • Easy & delicious! These rice krispie treats come together in no time at all and are loaded with sweet & creamy peanut butter flavor!
  • Better for you! Most rice krispie recipes involve marshmellows and loads of sugar. But not this one! Instead we’re using peanut butter for some added protein & maple syrup for a natural sweetener!
  • So much fun! I mean really…how can you say no to those cute little faces?!

Need it gluten free? Use gluten free crispy rice cereal instead of regular rice krispies!

Need it dairy free? Look for non-dairy white chocolate melting wafers to use instead!
