Easy Feta Chicken Salad

Comin’ at ya with another chicken salad recipe this week! Easy Feta Chicken Salad! It’s loaded with crisp veggies, fresh herbs, lean shredded chicken and you guessed it – lots of feta cheese!

I just love the flavors in this salad! The fresh dill, lemon juice and minced garlic pair perfectly with all the crisp veggies and salty feta cheese in the dish. Plus it’s loaded with protein! With an equal base of plain Greek yogurt and mayonnaise, this chicken salad has 2x the protein AND 2x the flavor. You’re going to love every zesty bite!

Ingredients You’ll Need

Shredded chicken: Make your own shredded chicken at home or use store bought shredded chicken for ease! (Directions on how we make our shredded chicken are further below in the post.)

Plain Greek yogurt: Gives your chicken salad a creamy consistency and helps to cut down on fat. Plus it’s loaded with protein! (We use 0% plain Greek yogurt from Fage for ours.)

Mayonnaise: An essential ingredient for any chicken salad recipe! It’s combined with the Greek yogurt to add more flavor while keeping the chicken salad consistency lush and creamy.

Feta cheese: Buy a block of feta and crumble it yourself for the best results. (It’s more flavorful and has a better consistency than store bought crumbled feta.)

Celery: We love the crunch this adds! You’ll need to dice at least 1 celery stalk.

Red bell pepper: The color of bell pepper 100% matters here! Green bell peppers tend to be bitter while red and yellow peppers are slightly sweeter. We want the crunch and sweetness of red/yellow peppers for this chicken salad recipe.

Pepperoncini: Adds a briny element to your chicken salad! I just love adding pepperoncini to this dish – feel free to add as little or as much as your want! They’re mildly spicy but can add up for some people.

Red onion: Red onion is more mild in flavor than white or yellow onion so it won’t overpower the other salad ingredients (especially if you’re prepping this salad a few days in advance.) I’d suggest finely dicing the onion too.

Garlic: Fresh garlic is more potent than garlic powder allowing it’s flavor to really shine in this dish! You’ll need one minced garlic clove for this recipe.

Lemon juice: Brings out the various flavors in your chicken salad and provides moisture. Fresh lemon juice works the best! (Bottled lemon juice tends to have additives in it that can alter it’s flavor.)

Fresh dill: Adding fresh herbs is a great way to elevate any chicken salad! Fresh dill compliments the Mediterranean flavors in this salad and pairs perfectly with the other ingredients.

Spices: Salt and black pepper are all you need to season your chicken salad.

How To Make Feta Chicken Salad

1. Prepare the chicken. If making homemade shredded chicken, cook and shred the chicken using 2 large forks then add it to a large bowl. If using store bought shredded chicken, break the chicken into smaller shreds then add it to a large bowl.

2. Prep the veggies. Finely dice the bell pepper, celery, pepperoncini and red onion and add them to the bowl with your chicken.

3. Toss. Add the crumbled feta, Greek yogurt, mayonnaise, minced garlic, lemon juice, chopped dill, salt and black pepper to the bowl and mix until fully combined. (Taste and adjust the salt and pepper, if needed.)

3. Serve! Serve immediately with your favorite pita chips or use the salad as a sandwich filling with your favorite bread. (Alternatively, you can keep the salad chilled in the refrigerator until you’re ready to serve.)

Make Shredded Chicken At Home

We usually make our own shredded chicken for chicken salads. (It’s so easy and we prefer like the consistency of the salad more.) Here’s how we do it:

  1. Season 1-1½ lbs. of chicken tenders with salt and pepper.
  2. Bake at 400 degrees for 15-18 minutes.
  3. Shred using 2 large forks!

Serving Suggestions

Make a chicken salad sandwich! Add sliced tomato and crisp lettuce for the ultimate sandwich experience! Try it with your favorite bread or switch it up with a brioche bun or buttery croissant instead.

Wrap it in a tortilla! Add spinach or shredded lettuce and sliced avocado! (I love chicken salad wraps for a quick & easy lunch!)

Serve it with chips! Pita chips, whole wheat crackers or even saltines would be delicious with this salad.

Top it over fresh greens! Spoon your chicken salad over a bed of shredded lettuce or mixed greens for a carb-friendly meal. (We’ll sprinkle extra feta over the top with a squeeze of lemon too!)
