Creamy Cucumber Salad with Greek Yogurt Dressing

Thinly sliced cucumbers & onions are tossed in a tzatziki-inspired Greek yogurt dressing! This creamy cucumber salad is a healthier spin on traditional sour cream-loaded cucumber salads & comes together in 15 minutes! It’s light & refreshing & the perfect side salad for all your favorite main dishes!

In case you haven’t noticed, I’ve been on a huge Mediterranean kick lately. One of my favorite Mediterranean condiments? Tzatziki! This creamy cucumber salad is what I’m calling tzatziki in salad form!😉

Thinly sliced cucumbers, red onion an the BEST zesty yogurt dressing! It’s an easy side salad that’s quick to put together and has the most incredible flavor. But I think the star of this dish has to be the yogurt dressing. It’s made with protein-packed Greek yogurt, garlic, a hefty amount of fresh dill and lemon juice to really enhance it’s flavor! This salad would be perfect for Spring or Summer!

Ingredients You’ll Need

Persian cucumbers: Persian or English cucumbers both work for this recipe. (They have less seeds and a thinner skin than regular cucumbers making them much easier to eat.)

Red onion: Keep your onion slices thin for the best results.

Plain Greek yogurt: Used as the base of your dressing. (We use 0% plain Greek yogurt for ours.) I love the extra protein it adds to your salad.

Olive oil: I always suggest using Extra Light Tasting Olive Oil for dressings. It’s mild in flavor and won’t overpower the other ingredients.

Lemon juice: Helps to brighten the dressing and adds a much needed tang. (Sometimes I’ll add another squeeze of lemon after the salad’s been mixed too.)

Garlic: You’ll need to mince one garlic clove for the dressing.

Fresh dill: A staple in tzatziki! I used 2 tablespoons of fresh dill in the dressing but feel free to use more if you prefer.

Spices: Salt and black pepper are all you need to season the dressing!

How to Make A Cucumber Salad

1. Make the dressing. Mix the Greek yogurt, garlic, chopped dill, lemon juice, olive oil, salt and black pepper together in a bowl then set it aside.

2. Prepare the cucumbers & onions. Thinly slice the cucumbers and red onion and add them to a bowl. (It might help to use a mandolin slicer to slice the cucumbers. You’ll want them about a ¼ inch thick.)

3. Toss. Pour the dressing over the cucumbers and onions and toss until fully combined. Taste and adjust the salt and pepper, if needed.

4. Serve. Serve immediately and enjoy!

Serving Suggestions

We absolutely love the cool refreshing notes in this salad. When brainstorming what to serve it with, think boldly seasoned meats, grilled fish or hearty roasted vegetables. Anything with a lot of spice and seasoning is fair game! It’d be a fantastic side dish to accompany spicy entrées too!

Optional Add-ins & Substitutions

Sour cream: Not a fan of Greek yogurt? Replace it with sour cream! I’d suggest tasting the dressing after it’s mixed to see if the salt and pepper needs to be adjusted. (Likewise, taste the salad after it’s been tossed too.)

Crumbled feta: Everything’s better with cheese! Add a handful of crumbled feta to bring out even more flavor!

Lemon zest: A pinch of lemon zest really enhances the flavor of the dressing and brings out it’s lemony notes.

Garlic powder: No garlic on hand? Replace it with garlic powder instead! I’d suggest using an ⅛ – ¼ teaspoon of garlic powder in the dressing.

Ingredients
