Chipotle Shrimp Tacos with Mango Salsa

These chipotle shrimp tacos are easy, healthy and perfect for a quick summer dinner! Featuring spicy seasoned shrimp, fresh mango salsa & crisp cabbage stuffed inside corn tortillas & drizzled with chipotle-lime crema.

Tacos are a staple weeknight dinner for us and nothing beats these spicy chipotle shrimp tacos! They’re loaded with bold smoky flavors and fresh ingredients accompanied by the BEST chipotle-lime crema! The sweet and spicy components in these tacos will have your taste buds singing.

The best part? They’re ready in just 30 minutes! Shrimp takes no time at all to cook and the simple 3-ingredient chipotle-lime crema is made in minutes. You can even prep the mango salsa ahead of time too!

Ingredients You’ll Need

Raw shrimp: We use large shrimp (21-25 count) for our tacos. You can leave them whole or cut them into thirds before serving.

Mangos: We love using altufa mangos (or honey mangos) for this recipe. They’re smaller than regular mangos and have a softer sweeter flesh. (I personally think it’s easier to find ripe altufa mangos too.) Regular mangos can be used instead.

Red onion: Red onion pairs the best with the rest of your mango salsa ingredients. (It’s more mild in flavor than white and yellow onion so it won’t overpower the tacos.)

Jalapeño: Remove the seeds and ribs to lessen the heat! (You’ll be getting plenty of heat from the shrimp and chipotle -lime crema.)

Cilantro: Use the leaves and stems for maximum flavor!

Lime juice: Fresh limes work the best! (Most bottled lime juice contains additives that can alter the flavor of your tacos.) You’ll need enough lime juice to coat the salsa and to use in your chipotle-lime crema. (We always serve a few extra lime wedges on the side too.)

Mayonnaise: Used as the base for your chipotle-lime crema. Feel free to use your favorite brand of mayo!

Cabbage: A necessity for any fish taco recipe! I’d suggest using a mandolin to finely shred the cabbage. Green or purple cabbage both work or you can use a mix of the two.

Spices: Smoked paprika, chipotle chile powder, chili powder, cumin and salt are needed to season the shrimp. You’ll be using chipotle chile powder in the chipotle-lime crema as well.

Corn tortillas: Corn tortillas add a fantastic depth of flavor to these tacos – especially when they’re slightly charred on the stove. (We use Romero’s King Size White Corn tortillas for ours.)

How To Make Chipotle Shrimp Tacos

1. Make the chipotle sauce. Whisk the mayonnaise, chipotle chili powder and lime juice together in a bowl. Cover and keep it chilled in the refrigerator while you prepare the rest of the tacos.

2. Make the mango salsa. Add the diced mango, red onion, jalapeño and chopped cilantro to a small bowl. Squeeze one lime over the top and toss until the salsa is coated to your liking. (Taste and add more lime juice, if needed.) Cover and refrigerate.

3. Shred the cabbage. Using a mandolin slicer, finely shred the cabbage and set it aside.

4. Prepare the shrimp. Mix the spices together in a small bowl and set them aside. Remove the tails from the shrimp and pat them with a paper towel to remove any excess moisture. Add the shrimp, olive oil and spice mixture to a large bowl and toss until the shrimp are fully coated.

5. Sauté. Heat a large sauté pan over medium-high heat. Once hot, add the shrimp and arrange them in a single layer. Cook for 2-3 minutes per side or until they’re no longer opaque. Transfer them to a serving bowl once done.

6. Assemble & serve! Spread a small amount of chipotle sauce on each tortilla and top with the chipotle shrimp. Drizzle the shrimp with extra sauce (if desired) followed by a spoonful of mango salsa and shredded cabbage. Add a squeeze of lime right before serving.

Let’s Talk Heat

Chipotle chile powder can be very spicy giving these tacos a pretty powerful kick. While I tried making these shrimp tacos as balanced as possible, there’s a few ways you can tone down or amp up the heat depending on your preference.

  • Less spice: Lessen the amount of chipotle chile powder used in the shrimp seasoning OR add more cooling ingredients like sliced avocado, cabbage and lime juice
  • More spice: Add another ¼ teaspoon of chipotle chile powder to the crema

Ingredients

For the shrimp tacos:

  • 1 lb. large shrimp, peeled & deveined
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp chili powder
  • ¼ tsp chipotle chile powder
  • ¼ tsp cumin
  • 1 Tbsp olive oil
  • Shredded cabbage
  • Corn tortillas, warmed

For the chipotle-lime crema:

  • ½ cup mayonnaise
  • ¼ tsp chipotle chile powder
  • 3 Tbsp lime juice

For the mango salsa:

  • 1 large mango, diced (or 2 small mangos)
  • ¼ cup red onion
  • 1 medium jalapeño, deseeded & finely diced
  • 2 Tbsp cilantro, chopped (leaves & stems)
  • 1 lime, juiced

Instructions

  • Make the chipotle-lime crema. Whisk the crema ingredients together until smooth then cover and refrigerate.
