Avocado Cucumber Salad – So simple and so freaking good! To say we’re obsessed is an huge understatment. (I’ve honestly lost count with how many times we’ve made this lately.)
It’s crunchy and fresh from the cucumbers, creamy from the avocado and has a fabulous tang from the feta cheese and lemon vinaigrette. It really is the easiest salad to put together and the flavors just work! Plus I love that it comes together in just around 15 minutes!
We’ve been loving this salad with my Lemon Oregano Chicken and some rice for an easy weeknight dinner. It’s fast, fresh, full of vibrant flavors and pairs well with so many things. Side dishes don’t get better than that!

Ingredients You’ll Need
Mini cucumbers: Crisp, sweet and extra refreshing! Mini cucumbers are best for this salad – they have a thin skin, minimal seeds and are the perfect size!
Avocados: Use ripe (but still slightly firm) avocados so they hold their shape when tossed.
Feta cheese: Gives the salad that perfect pop of salitness and tang. Plus it’s excellent at soaking up the vinaigrette as the salad sits – making every bite even more delicious!
Red onion: Adds a subtle sharpness and bite to balance the other creamy and fresh components. I’d suggest thinly slicing the onions for the best results.
Fresh herbs: Fresh dill and basil bring a bright herby finish to the salad. Don’t skip them – they make a HUGE difference!
Lemons: Fresh lemon juice is the star of the vinaigrette. It’s bright, zippy flavor ties everythign together!
Olive oil: I’d recommend using a “light tasting” olive oil for the vinaigrette. It won’t overpower the other flavors and still balances the acidity.
Seasonings: Salt and black pepper are all your need to bring the dressing to life.
How to Make An Avocado Cucumber Salad


1. Make the dressing. Whisk the dressing ingredients together in a small measuring glass or jar. Set it aside once done.

2. Toss. Add the cucumbers, avocado, feta cheese, onion, dill and basil to a large bowl. Pour the dressing over the top and toss until the salad is coated to your liking. Taste and adjust the salt and pepper, if needed.

3. Serve. Serve immediately and enjoy.
Storing
This salad is best served fresh but it can be stored in an air tight container in the refrigerator for 1-2 days. Alternatively, you can prep most of the ingredients (except the cucumbers and avocado) in seperate containers and refrigerate them until ready to serve.

Ingredients
For the cucumber salad:
- 6 mini cucumbers, sliced thin
- 2 large avocados, largely diced
- ½ cup (heaping) crumbled feta cheese (from a block of feta)
- ¼ cup red onion, thinly sliced
- ¼ cup fresh dill, chopped
- ¼ cup fresh basil, chopped
