For the french toast roll ups:

  • 12 slices of white bread (or you favorite bread)
  • Strawberries, cut into thin "sticks"
  • Chocolate hazelnut spread (Nutella)
  • ¼ cup unsweetened almond milk (or your favorite type of milk)
  • 1 egg
  • ½ tsp cinnamon

  • Whisk your eggs, almond milk and cinnamon together in a shallow bowl and set it aside. Then take your bread slices and cut all the crusts off of each slice.
  • Next, slightly flatten your slices with a rolling pin. (They should be about ¼ of an inch thick.) Then take one flattened slice of bread and spread a small amount of your chocolate hazelnut spread over the entire slice. Place your strawberry "sticks" at one end of the slice and carefully roll it until you reach the other side. Repeat the process with your remaining bread slices.
  • Next, place a pan on the stove and heat it over medium high heat. Once the pan is hot, spray it with non-stick cooking spray and take one of your roll ups, dip it into your egg mixture and place it in the pan. Repeat with your remaining roll ups. (You might need to do this in batches so they don't burn. I'll usually cook 4-5 at a time.)
  • Cook the rolls for 1-2 minutes on each side or until all sides are golden brown. Remove your roll ups from the pan and toss them in your cinnamon sugar. Serve immediately!
