Roasted Chipotle Salmon with Peach Salsa

Salmon fillets are rubbed with a smoky chipotle seasoning, baked to perfection and topped with the best homemade peach salsa! They're so easy to make and the perfect blend of sweet and spicy!

Ingredients

For the chipotle salmon:

  • 4 salmon fillets, without the skin*
  • 1 tsp chili powder
  • ¼-½ tsp chipotle chili powder (depending on how spicy you want your salmon)
  • ½ tsp paprika
  • ½ tsp salt

For the peach salsa:

  • 2 large peaches, diced
  • ¼ of a red onion, finely chopped
  • 2 Tbsp cilantro, chopped
  • 2-3 limes, juiced (depending on how "tangy" you want it)

Instructions

To make the salsa:

  • Mix the ingredients for your salsa together and keep it chilled in the fridge while you prepare your salmon.

To make the salmon:

  • Preheat your oven to 400 degrees and spray a baking dish with non-stick cooking spray.
  • Mix your spices together and season both sides of your salmon fillets. Place the fillets in your prepared baking dish and bake for 10 minutes. (The salmon should flake easily with a fork once it's done.)
  • Serve immediately with your peach salsa on top.

Notes

*If using salmon fillets with the skin on - Only season the tops of your fillets and place them skin side down on the baking sheet to bake.
