I feel like I’ve been on a “lettuce free” salad kick lately & this baby here just might be a new favorite! It’s so refreshing, easy to make & full of so many different flavors & textures too! (Plus it doubles as a dip if you serve it with chips!😉) But what’s even better?! The fact that it’s made with all organic ingredients that I picked up from my local @sprouts - which also makes it the perfect dish for this year’s upcoming Earth Day too!🤗
(One of the easiest ways we can help take care of our Earth is to use fresh & organic ingredients which is why @sprouts is always my go-to store!)

Black Bean, Mango & Avocado Salad🥭
1 15oz can black beans, drained & rinsed
1-2 mangos, diced
2 avocados, diced
1 cup corn (fresh or frozen & thawed)
1/2 of a red onion, chopped
1/4 cup cilantro, chopped
3-4 limes, juiced
1/2 tsp chili powder
Salt & pepper, to taste

1. Add all of your ingredients to a bowl & toss in your lime juice. Season with salt & pepper to taste & chill for 1 hour before serving.
(If meal prepping, omit the avocado & add it right before you’re ready to eat!)
