Strawberry & Chocolate Hazelnut French Toast Roll Ups

Sweet strawberries and rich chocolate hazelnut spread come together to make this fun and festive breakfast! These roll ups are so easy to make and so decadent too!

These french toast roll ups are the perfect breakfast for Valentine's Day! They're rich, decadent, so easy to make and so much fun too!

So Charlie and I have this tradition where every Valentine’s Day we always make each other a really nice breakfast in bed. (His is pancakes and mine usually involves some kind of french toast.) And this year I’m 100% requesting these strawberry and chocolate hazelnut french toast roll ups! Not only are they super tasty but they’re so easy to make and so much fun to eat too! (Plus they’d be perfect for a bridal shower brunch or even for Mother’s Day!)

Ingredients

  • White bread: Used as the main vessile for your french toast roll ups. (You can also use your favorite type of bread instead too. Gluten free bread also works if needed.)
  • Strawberries: Give your roll ups a juicy burst of freshness and pairs so well with your chocolate hazelnut spread!
  • Chocolate hazelnut spread (Nutella): Helps to hold your roll ups together and adds so much richness and decadence!
  • Almond milk: Used to thin out the egg in your batter. (Feel free to use your favorite type of milk instead; regular, skim, a different dairy free milk)
  • Eggs: Helps to crisp up the outside of your rolls!
  • Cinnamon sugar: Completely optional but definitely takes your roll ups to the next level!
Quick, easy and always a huge hit with kids! These strawberry and nutella toast roll ups are super simple to make and taste amazizng too!

How to make french toast roll ups

  1. Whisk your eggs, almond milk and cinnamon together in a shallow bowl and set it aside.
  2. Then take your bread slices and cut all the crusts off each slice.
  3. Next, slightly flatten your slices with a rolling pin. (They should be about 1/4 of an inch thick.)
  4. Then take one flattened slice of bread and spread a small amount of your chocolate hazelnut spread over the entire slice.
  5. Place your strawberry “sticks” at one end of the slice and carefully roll it until you reach the other side. Repeat the process with your remaining bread slices.
  6. Next, place a pan on the stove and heat it over medium high heat.
  7. Once the pan is hot, spray it with non-stick cooking spray and take one of your roll ups, dip it into your egg mixture and place it in the pan. Repeat with your remaining roll ups. Cook the rolls for 1-2 minutes on each side or until all sides are golden brown.
  8. Remove your roll ups from the pan and toss them in your cinnamon sugar. Serve them immediately!
These delicious french toast roll ups are made with sliced strawberries and chocolate hazelnut spread all rolled up in white bread and coated with cinnamon sugar! They're such a fun treat for brunch!

Tips for making strawberry & chocolate hazelnut french toast roll ups

  • Make sure to cut your strawberries into long thin “sticks”. If you leave your fruit too chunky then it will be hard to roll them.
  • Use a thin layer of chocolate hazelnut spread. If you’re anything like me and have a tendincy to go overboard on the filling – DON’T! If you do, they’ll end up oozing all over the pan when they’re cooking and burn.
  • Don’t roll your bread too thin! If they’re too thin, then your roll ups with be a little flimsy after they’ve finished cooking and might be hard to handle.
  • Cook your french toast roll ups in batches and don’t overcrowd the pan. If you’re cooking too many at one time, it can be easy to loose track of which ones you’ve already flipped which can cause them to burn. (I’ll usually cook 4-5 at a time.)

Variations

Nutella not your thing? No worries at all! You can make these roll ups with so many different fillings! Here are a few of our favorite ways to fill these tasty treats.

  • Peanut butter/nut butter
  • Cookie butter/biscoff spread
  • Cream cheese/flavored cream cheese
  • Use your favorite jam in place of the strawberries
  • Butter & cinnamon sugar (Spread a thin layer of butter over your bread slice, give it a generous sprinkle of cinnamon sugar and roll it all up. It tastes just like a cinnamon roll!)

Ingredients

Chocolate Peanut Butter Crunch Bars🍫🥜
3 cups rice cereal (use gluten free if needed)
3/4 cup + 2 Tbsp peanut butter
2-4 Tbsp honey (depending on how sweet you want them)
Chocolate layer: 1 1/4 cups chocolate chips + 2 Tbsp peanut butter

1. Line an 8x8 pan with parchment paper & set it aside. Then mix your peanut butter & honey together & pour it over your rice cereal. Mix the two together until fully combined & press your rice crispies into your prepared pan.
2. Next, heat your chocolate chips & 2 Tbsp of pb together in the microwave at 30 second intervals until completely melted. Then pour it over your cereal layer. 
3. Place the pan in the fridge until the chocolate has set. Cut & serve immediately!

Smoked Salmon Sushi Roll Ups🍣
8oz. smoked salmon
1/2 cup whipped cream cheese
2 Tbsp green onion, chopped
2 tsp lemon zest
1 tsp lemon juice
1/3 of a cucumber, sliced into thin strips
1/2 an avocado, sliced into thin strips
1 Tbsp EBTB seasoning

Lemon-Soy Sauce: 2 Tbsp soy sauce + 2 Tbsp lemon juice + 1 Tbsp water + 1 Tbsp mirin + 1 Tbsp sliced green onion
.
1. Place a piece of plastic wrap on the counter & sprinkle it with your EBTB seasoning. Then layer your smoked salmon over the seasoning to form a small rectangle.
2. Next mix your cream cheese, green onion, lemon juice & zest together & spread it over your smoked salmon.
3. Place your avocado & cucumber strips in the center of the rectangle & use your plastic wrap to help you roll it up.
4. Place your salmon roll in the freezer for 10-15 minutes. Slice & serve it with your soy sauce!

Anyone else been having a moment with citrus lately or is that just me?!🙋🏼‍♀️ Also is anyone else completely baffled by all the different types of citrus we have now too??🤯 I was walking around @sprouts the other day & must have seen at least 10 different varieties! (Which is probably why I love shopping there during citrus season tbh.😉) Like these vintage heirloom navel oranges - they’re a little sweeter & easier to peel than most oranges which makes them perfect for snacking or adding to salads! And if you’re going to have a fruit salad - make this one! It’s sweet, a little tart, so easy & so refreshing too!🤗

Winter Fruit Salad🍊
Oranges, peeled & chopped
Strawberries, halved
Kiwis, peeled & quartered
Blueberries
Pomegranate seeds
Orange Poppy Seed Dressing: 1/4 cup orange juice + 1 1/2 tsp honey + 1/2 tsp poppy seeds

1. Add all of your fruit to a bowl & drizzle your dressing over the top. Toss your salad until everything is coated.
2. Keep it chilled in the fridge until you’re ready to serve!

Cilantro Lime Shrimp & Avocado Salad🥑
1 lb. precooked shrimp, chopped
1/2 cup tomatoes, chopped
1-2 avocados, diced
1/4 cup red onion, finely chopped
1/4 cup cilantro, finely chopped
3 limes, juiced
Salt & pepper, to taste.

1. Add your chopped shrimp, tomatoes, avocado, onion & cilantro to a bowl & season with salt & pepper. Add your lime juice & toss to coat.
2. Place your salad in the fridge to chill until you’re ready to eat! (If meal prepping, keep the avocado separate until you’re ready to eat.)
