Calling all peanut butter lovers – You need these lightened up ice cream sandwiches in your life! They’re creamy, decadent and so easy to make!

These delicious ice cream sandwiches are so easy to make and are better for you too! They're made with rice krispies, peanut butter, honey and your favorite vanilla ice cream!

Ok so there’s a bit of a story to go with these babies. When Charlie and I were first dating, he couldn’t stop raving about these peanut butter ice cream sandwiches his mom made every summer that were apparently a Godsend… (At the time, I was NOT a huge peanut butter fan so I was like “hmm yeah ok…”😏) BUT then I had a bite at one of their family gatherings and I kid you not, my life was changed! It was creamy and crunchy and so peanut buttery but so sooo good! So I’ve made a few tweaks over the years to her original recipe just to lighten it up a bit and I have to say, they’re pretty darn delicious! (Even she thinks so too!) So here it is loves, the best dessert you’ll ever make this summer: peanut butter rice krispie ice cream sandwiches!

These easy peanut butter rice krispie ice cream sandwiches are absolutely perfect for summer! They're sweet, crispy and healthier for you too!

Ingredients

4 ingredients! That’s it, that’s all you need to make this hunk of deliciousness!

  • Rice Krispies
  • Peanut Butter: Regular or natural works for this recipe. You can also use any other type of nut butter or flavored peanut butter you want too!
  • Honey
  • Ice cream: Feel free to use your favorite! (I LOVE using vanilla or chocolate chip! 😉 )
Peanut butter, honey, rice krispies and your favorite flavored ice cream are all you need to make these delicious treats! This tasty dessert is so much fun to make and is always a huge hit!

Can I make these dairy free?

Absolutely! Just use your favorite dairy free ice cream! Because Charlie is dairy fee, I’ll usually make half of a 9×13 pan with regular ice cream and half the pan with his dairy free ice cream. Both work just the same!

Can I make these gluten free?

Yes! Simply use gluten free rice krispies instead! They can be a little hard to find in stores but most places will keep them in their gluten free section. Then prepare the sandwiches according to the directions below.

Looking for a quick and easy summer treat? Try making these healthier ice cream sandwiches! They're only 4 ingredients and can easily be made gluten free and dairy free too!

Tips for making these ice cream sandwiches:

  • Freeze the first layer of peanut butter rice krispies for around 20 minutes before adding your ice cream layer.
  • Let your ice thaw at room temperature for a few minutes before making the second layer. This makes the ice cream easier to spread.
  • Wait until the ice cream layer is completely frozen before adding your final rice krispy layer. The rice krispies can “sink” into your ice cream layer if it’s still too soft.

Peanut Butter Rice Krispie Ice Cream Sandwiches

Ingredients

(Double the rice krispie layer for a 9×13 pan)

  • 3 cups Rice Krispies (use gluten free if needed)
  • ¾ cup + 2 Tbsp peanut butter (regular or flavored)
  • 2 Tbsp honey
  • 1 container vanilla ice cream (or your favorite ice cream flavor)

Instructions

  • Mix the rice krispies, peanut butter and honey together in a large bowl. Press the mixture into the bottom of a 9×13 pan. Place the pan in the freezer for at least 20 minutes.
  • Then take the pan out and spread your ice cream over the rice krispies to form your second layer. Place the pan back in the freezer for 1 hour or until the ice cream has hardened.
  • Once the ice cream is hard, mix together another batch of your rice krispies and press it on top of your ice cream to form the top layer. Place the pan back in the freezer until you're ready to eat.
  • Cut and serve immediately!

And this one always reminds me of summers spent with my family.🥰 It’s quick & easy, tangy, creamy & has just the right amount of spice to keep things interesting!🕺🏼 (Plus the colors just pop in this bowl too & we all know how much I love my colorful meals!😉)

Cilantro Lime Pasta Salad🥑
8 oz. bow tie pasta, cooked & cooked (use gluten free if needed)
1 1/2 cups corn, cut off the cob (can be fresh or frozen)
1 1/2 cups cherry tomatoes, sliced
1/2 of a red onion, chopped
2 Tbsp cilantro, chopped
1-2 small avocados, diced

Cilantro Lime Dressing: Blend together 1/2 cup plain Greek yogurt + 1/4 cup lime juice + 1/4 cup cilantro + 2 garlic cloves + 1/2 tsp sat + 1/8-1/4 tsp cayenne
.
1. Add all of your salad ingredients to a bowl & toss it with your desired amount of dressing. Keep it chilled in the fridge until you’re ready to eat! (It’s also amazing with a little cotija on top too!😉)

I feel like we’ve been grilling up a storm over here lately & these kabobs are always one of our favorites! They’re only 5 ingredients, are so easy to make & taste just like summer on a stick!😎 (Plus they’re the one thing I actually feel comfortable grilling too so that’s a huge win in my book!😉)

Jerk Chicken Kabobs🍍
1 1/2 lbs. chicken breast, cut into 1 inch cubes
3 Tbsp @mccormickspice jerk seasoning
Pineapple, cut into cubes
2 red bell peppers, cut into cubes
1 red onion, cut into cubes
.
1. Preheat your grill to medium heat & spray it with non-stick cooking spray.
2. Add your chicken pieces & seasoning to a plastic bag & shake it until the chicken is fully coated. Then prepare your skewers.
3. Once the grill is hot, place your kabobs on the grill & cook for 15-20 minutes, turning once half way through. Serve immediately!

These are always a favorite of mine whenever I’m in the mood for a quick & easy lunch that’s super tasty too!😍 They’re soo good, cook up in minutes & you can mix & match any toppings you want! (Plus they’re easily made gluten free & dairy free too!)

BBQ Chicken Tortilla Pizzas🍕
Flour tortillas (I used @sietefoods almond flour tortillas)
Bbq sauce
Rotisserie chicken, shredded
Shredded mozzarella (use dairy free cheese if needed)
Red onion, sliced thin
Cilantro, chopped
.
1. Preheat your oven to 400 degrees & place a cookie sheet in the oven while it heats up. Once it’s ready, place your tortillas on the hot sheet & bake them for 4-5 minutes. 
2. Then mix some bbq sauce with your shredded chicken & set it aside. When your tortillas are crispy, spread some bbq sauce over the top of each tortilla & layer them with cheese, bbq chicken & red onion. Bake for 7-10 minutes are until the cheese has melted.
3. Sprinkle some cilantro over the top, cut & serve!

I feel like I’ve been on a “lettuce free” salad kick lately & this baby here just might be a new favorite! It’s so refreshing, easy to make & full of so many different flavors & textures too! Black Bean, Mango & Avocado Salad🥭
1 15oz can black beans, drained & rinsed
1-2 mangos, diced
2 avocados, diced
1 cup corn (fresh or frozen & thawed)
1/2 of a red onion, chopped
1/4 cup cilantro, chopped
3-4 limes, juiced
1/2 tsp chili powder
Salt & pepper, to taste
.
1. Add all of your ingredients to a bowl & toss in your lime juice. Season with salt & pepper to taste & chill for 1 hour before serving. 
(If meal prepping, omit the avocado & add it right before you’re ready to eat!)
