Cheesy, creamy and so easy to make! This simple one pot dish is a mac and cheese lover’s dream!

A delicious healthier version of your favorite macaroni and cheese! It's made with no flour, no butter and only requires 6 ingredients!

Nothing says comfort like a big ol’ bowl of cheesy macaroni and cheese! (Am I right or am I right?! 😉 ) Bonus points if it’s made a little healthier though… And even more bonus points if you can make in less than 15 minutes too! Well you’re in luck babes because that’s exactly what this easy one pot broccoli mac and cheese is all about! It’s rich, creamy, made with no flour/butter and is perfect for a tasty weeknight dinner!

The cheesiest and most flavorful mac and cheese recipe you'll ever find! Plus it's loaded with tedner broccoli and better for you ingredients too!

Ingredients

  • Dry pasta: I personally love using rotini pasta for this recipe, but feel free to use your favorite short pasta instead. (A few other great options would be options penne, farfalle (bowtie) or elbow pasta too!)
  • Milk: Adds creaminess to your mac and cheese and is also used to help cook your pasta.
  • Water: Used to cook your pasta and broccoli.
  • Cheddar cheese: Provides that cheesy ooey gooey goodness that we all love about mac and cheese! (You can use mild, sharp or even white cheddar too for this recipe!)
  • Broccoli: Adds some veggies and a little pop of color to your dish.
  • Seasonings- ground mustard, salt & pepper: Elevates your flavors and ties it all together!
Quick, easy and perfect for a simple weeknight meal! This tasty mac and cheese recipe will become a family favorite in no time!

How to make one pot broccoli mac & cheese

This dish couldn’t be any simplier loves! (Which is probably why it’s one of my go-to meals whenever I’m craving a little comfort food.) Just follow these quick and easy steps below:

  1. Pour your milk, water, pasta and salt into a large pot and bring it to a boil. Once it’s boiling, reduced it to a simmer and allow the pasta to simmer for 8-10 minuets or until almost all of the liquid has been absorbed. (This is the key to getting that perfect gooey macaroni and cheese consistency.)
  2. Then add your broccoli and cook for an additional 1½ – 2 minutes. (Depending on how tender you want the broccoli.)
  3. Once the broccoli is cooked to your liking, take the pot off the stove and add your grated cheese, ground mustard and pepper to taste. Stir everything together until the cheese has completely melted.
  4. Serve immediately!
Broccoli, cheddar cheese and bacon - the perfect trifecta! Try adding some crumbled bacon bits to your one pot broccoli mac and cheese a for a delicious and hearty meal!

Toppings & Variations

You don’t need to stop at broccoli when it comes to toppings and mix-in’s! Here are a few of my favorite things to add to this dish too:

  • Chopped/shredded chicken
  • Crumbled bacon bits
  • Red pepper flakes
  • Parmesan cheese

Need a gluten free version? Simply replace the regular pasta with your favorite gluten free pasta and follow the same directions as below. (Some pastas do take longer to cook than others so it might help to look at the directions on the box to know if you need to adjust your cooking time.)

One pot macaroni and cheese is the perfect lazy meal! It takes less than 15 minutes to make and is even healthier for you too!

Tips for making one pot broccoli mac & cheese

  • Cut your broccoli florets into small bite sized pieces! If you prefer your broccoli a little more on the soft side and not so “crisp” then I would definitely suggest sutting them smaller. The smaller they are, the less time they’ll take to cook too.
  • Make sure most of the liquid has been absorbed before you add the broccoli! Broccoli gives off a ton of water when it’s being cooked so if there’s too much water in the pot before you add it, your pasta can become a little soupy.
  • Add more milk to your mac and cheese if it’s too dry! Sometimes too much liquid can be absobed by your pasta which can result in it being dry. (You’ll know it’s too dry if your cheese is having a hard time melting and forming a “sauce.” If that happens, just keep adding milk a little bit at a time until your reach your desired consistency.
  • REHEATING INSTRUCTIONS: Place your cold mac & cheese in a large pot and heat it over medium high heat on the stove. (The pasta will solidify slightly when it’s stored in the fridge so you might need to break it up a bit with a spatula.) As it begins to warm up, add a splash of milk and give it a few stirs. Continue to do this until the pasta is warm and you reach your desired consistency.

One Pot Broccoli Mac & Cheese

Easy, cheesy and healthier for you too! This delicious mac and cheese recipe is so simple to make and perfect for a quick weeknight meal!

Ingredients

  • 2 cups dry rotini pasta
  • 2 cups milk (regular or dairy free)*
  • 1 cup water
  • 1 cup broccoli, cut into bite-sized pieces
  • 1¾ cup cheddar cheese
  • ½ tsp ground mustard
  • ¾ tsp salt
  • Black pepper, to taste

Instructions

  • Pour the milk, water, pasta and salt into a large pot and bring it to a boil over medium high heat. Then turn the heat down to medium and let the pasta simmer for 8-10 minutes or until most of the liquid has been aborbed. (This is very important!)
  • Next add your broccoli and cook for an additional 2 mintues. (The broccoli will give off a lot of water while it's cooking so make sure there is very little liquid in the pot before adding it.)
  • Once the broccoli is cooked to your liking, take the pot off the stove and add your cheese, ground mustard and pepper to taste. Stir until the cheese has completely melted. Serve immediately!

*I used unsweetened almond milk for this recipe.

Chocolate Peanut Butter Crunch Bars🍫🥜
3 cups rice cereal (use gluten free if needed)
3/4 cup + 2 Tbsp peanut butter
2-4 Tbsp honey (depending on how sweet you want them)
Chocolate layer: 1 1/4 cups chocolate chips + 2 Tbsp peanut butter

1. Line an 8x8 pan with parchment paper & set it aside. Then mix your peanut butter & honey together & pour it over your rice cereal. Mix the two together until fully combined & press your rice crispies into your prepared pan.
2. Next, heat your chocolate chips & 2 Tbsp of pb together in the microwave at 30 second intervals until completely melted. Then pour it over your cereal layer. 
3. Place the pan in the fridge until the chocolate has set. Cut & serve immediately!

Smoked Salmon Sushi Roll Ups🍣
8oz. smoked salmon
1/2 cup whipped cream cheese
2 Tbsp green onion, chopped
2 tsp lemon zest
1 tsp lemon juice
1/3 of a cucumber, sliced into thin strips
1/2 an avocado, sliced into thin strips
1 Tbsp EBTB seasoning

Lemon-Soy Sauce: 2 Tbsp soy sauce + 2 Tbsp lemon juice + 1 Tbsp water + 1 Tbsp mirin + 1 Tbsp sliced green onion
.
1. Place a piece of plastic wrap on the counter & sprinkle it with your EBTB seasoning. Then layer your smoked salmon over the seasoning to form a small rectangle.
2. Next mix your cream cheese, green onion, lemon juice & zest together & spread it over your smoked salmon.
3. Place your avocado & cucumber strips in the center of the rectangle & use your plastic wrap to help you roll it up.
4. Place your salmon roll in the freezer for 10-15 minutes. Slice & serve it with your soy sauce!

Anyone else been having a moment with citrus lately or is that just me?!🙋🏼‍♀️ Also is anyone else completely baffled by all the different types of citrus we have now too??🤯 I was walking around @sprouts the other day & must have seen at least 10 different varieties! (Which is probably why I love shopping there during citrus season tbh.😉) Like these vintage heirloom navel oranges - they’re a little sweeter & easier to peel than most oranges which makes them perfect for snacking or adding to salads! And if you’re going to have a fruit salad - make this one! It’s sweet, a little tart, so easy & so refreshing too!🤗

Winter Fruit Salad🍊
Oranges, peeled & chopped
Strawberries, halved
Kiwis, peeled & quartered
Blueberries
Pomegranate seeds
Orange Poppy Seed Dressing: 1/4 cup orange juice + 1 1/2 tsp honey + 1/2 tsp poppy seeds

1. Add all of your fruit to a bowl & drizzle your dressing over the top. Toss your salad until everything is coated.
2. Keep it chilled in the fridge until you’re ready to serve!

Cilantro Lime Shrimp & Avocado Salad🥑
1 lb. precooked shrimp, chopped
1/2 cup tomatoes, chopped
1-2 avocados, diced
1/4 cup red onion, finely chopped
1/4 cup cilantro, finely chopped
3 limes, juiced
Salt & pepper, to taste.

1. Add your chopped shrimp, tomatoes, avocado, onion & cilantro to a bowl & season with salt & pepper. Add your lime juice & toss to coat.
2. Place your salad in the fridge to chill until you’re ready to eat! (If meal prepping, keep the avocado separate until you’re ready to eat.)
