Lemon French Toast with Blueberry Compote

Fluffy, sweet and bursting with fresh lemon and blueberry flavors! If summer was a breakfast food, this would be it!

Easy lemon french toast that's only 5 ingredients! It's the perfect breakfast for summer!

French toast was my jam growing up! (In fact now that I think about it, I was never really into pancakes or waffles that much… But french toast, that was always my breakfast of choice! 😉 ) And since it’s almost summer and I feel like I’ve been trying to incorporate lemon into everything lately, this easy lemon french toast with blueberry compote seemed like it was just begging to be made! It’s crispy on the outside, light and airy and exploding with fresh citrus and blueberry flavor!

Ingredients

French toast is essentially 3 basic ingredients; bread, eggs and milk. For this recipe, we’re just adding a little lemon-y spin to them and incorporating some lemon juice and lemon zest too! Here are all the ingredients you’ll need listed below:

  • Thick sliced bread: Always use thick sliced bread for french toast! (See more info below.)
  • Eggs: Helps to form a crispy “crust” on the outside of the bread.
  • Milk: Any type of milk works for this recipe! (I used unsweetened almond milk to keep my recipe dairy free.)
  • Fresh lemon juice: DO NOT use store bought lemon juice! It was a very processed taste which can muddle the flavors of your french toast. Real lemon juice is much more bright and vibrant in flavor.
  • Lemon zest: This recipe calls for the zest of one lemon (or around 1 Tbsp.) If you want to add even more lemon flavor to your toast, I would suggest adding more zest to your batter.

What is the best type of bread to use for this french toast recipe?

I would suggest using a thick cut white bread. I’ve found that white bread seems to work the best because it has a much milder flavor than most other breads and really allows the lemon to shine. If you use a wheat or sourdough bread, it can overpower the flavor of the lemon.

I’ve also found that thicker sliced bread works better too. If you’re bread is sliced too thin then it can easily become soggy from the batter and won’t hold up very well.

How to make easy blueberry compote

  • 2 cups fresh blueberries
  • 1 Tbsp maple syrup
  • 1/2 tsp lemon juice
  1. Combine all ingredients in a sauce pot and heat them over medium heat. Stir continuously and cook for 6-8 minutes or until some of the berries have bursts and the sauce starts to thicken.

*Compote can be made a few days in advance.

To store the compote, pour it into an air tight container and place it in the fridge until your ready to eat. Heat it up on the stove or warm it in the microwave before serving.

An incredibly delicious french toast recipe that's bursting with fresh lemon flavor! It's paired with a sweet blueberry compote for a breakfast meal that just screams summer!

Tips for making lemon french toast:

  • Add more lemon zest to the batter if you want a stronger lemon flavor. DO NOT add any more lemon juice!
  • Dip both sides of your bread in the batter very quickly! The longer your bread sits in the batter, the more it will soak up and take longer to cook. (This can lead to soggy french toast!)
  • Make the blueberry compote the day before (or a few days before) you plan to use it. This just makes your life a little easier come breakfast time. 😉
  • To keep your already done french toast slices warm, place them on an oven safe pan and keep them in the oven at 200 degrees until all of your slices are done.

Lemon French Toast with Blueberry Compote

Ingredients

For the french toast:

  • 6-7 slices thick white bread
  • 2 eggs
  • ½ cup unsweetened almond milk
  • ¼ cup fresh lemon juice
  • zest from 1 lemon (about 1 Tbsp)
  • Optional toppings: powdered sugar, lemon zest, blueberries

For the blueberry compote:

  • 2 cups fresh blueberries
  • 1 Tbsp maple syrup
  • ½ tsp lemon juice

Instructions

To make the blueberry compote:

  • Spray a sauce pot with non-stick cooking spray. Place all the compote ingredients in the pot and heat them over medium heat. Stir and cook for 6-8 minutes or until most of the blueberries have burst and the sauce slightly thickens. Set it aside until your ready to use it.

To make the french toast:

  • Whisk the eggs, almond milk, lemon juice and lemon zest together in a bowl. Set the batter aside.
  • Heat a large pan or skillet over medium heat. Once it's hot, spray it with non-stick cooking spray. Then one at a time, dip your bread slices into your batter and place them in the pan. Cook for 2-3 minutes on one side, flip them and cook for 2-3 more minutes on the other side (or until golden brown).
  • Serve with your warmed blueberry compote and enjoy!

Notes

You can add an additional tablespoon of lemon zest to the batter for even more lemon flavor!

They’re easy to make, baked instead of fried & are loaded with the best citrus marinated chicken too!🤗 (And let’s not forget about that sauce because holy moly - it’s a winner!😉)

Chicken Carnitas Tacos🌮
1 lb. chicken thighs (boneless & skinless)
2 oranges, juiced
1 lime, juiced
4 garlic cloves, minced
2 Tbsp cilantro, chopped
1 jalapeño, deseeded & finely chopped
1 Tbsp olive oil
1 Tbsp oregano
1 tsp cumin
1 tsp salt
1/4 tsp pepper
1/2 tsp paprika
Corn tortillas
Red onion, chopped
Cheese
Avocado Cilantro Lime Sauce: Blend together 1 avocado + 1/4 cup cilantro + 2 garlic cloves + 2 Tbsp lime juice + 1/4 tsp salt

1. Combine your marinade ingredients & pour them to a plastic bag with your chicken thighs. Marinate for at least 30 minutes. Then place your chicken in a baking dish & bake at 400 degrees for 20 minutes. Shred the chicken once it’s done.
2. Next, place your tortillas on a baking sheet lined with parchment paper & spray them with avocado oil. Bake the tortillas at 400 degrees for 2 minutes. Then take them out of the oven & layer one side with cheese, shredded chicken & red onion. Fold the other side over the top & bake your tacos for 10-12 more minutes (or until crispy).
3. Serve immediately with your sauce & favorite toppings!

Chocolate Peanut Butter Crunch Bars🍫🥜
3 cups rice cereal (use gluten free if needed)
3/4 cup + 2 Tbsp peanut butter
2-4 Tbsp honey (depending on how sweet you want them)
Chocolate layer: 1 1/4 cups chocolate chips + 2 Tbsp peanut butter

1. Line an 8x8 pan with parchment paper & set it aside. Then mix your peanut butter & honey together & pour it over your rice cereal. Mix the two together until fully combined & press your rice crispies into your prepared pan.
2. Next, heat your chocolate chips & 2 Tbsp of pb together in the microwave at 30 second intervals until completely melted. Then pour it over your cereal layer. 
3. Place the pan in the fridge until the chocolate has set. Cut & serve immediately!

Smoked Salmon Sushi Roll Ups🍣
8oz. smoked salmon
1/2 cup whipped cream cheese
2 Tbsp green onion, chopped
2 tsp lemon zest
1 tsp lemon juice
1/3 of a cucumber, sliced into thin strips
1/2 an avocado, sliced into thin strips
1 Tbsp EBTB seasoning

Lemon-Soy Sauce: 2 Tbsp soy sauce + 2 Tbsp lemon juice + 1 Tbsp water + 1 Tbsp mirin + 1 Tbsp sliced green onion

1. Place a piece of plastic wrap on the counter & sprinkle it with your EBTB seasoning. Then layer your smoked salmon over the seasoning to form a small rectangle.
2. Next mix your cream cheese, green onion, lemon juice & zest together & spread it over your smoked salmon.
3. Place your avocado & cucumber strips in the center of the rectangle & use your plastic wrap to help you roll it up.
4. Place your salmon roll in the freezer for 10-15 minutes. Slice & serve it with your soy sauce!

Anyone else been having a moment with citrus lately or is that just me?!🙋🏼‍♀️ Also is anyone else completely baffled by all the different types of citrus we have now too??🤯 I was walking around @sprouts the other day & must have seen at least 10 different varieties! (Which is probably why I love shopping there during citrus season tbh.😉) Like these vintage heirloom navel oranges - they’re a little sweeter & easier to peel than most oranges which makes them perfect for snacking or adding to salads! And if you’re going to have a fruit salad - make this one! It’s sweet, a little tart, so easy & so refreshing too!🤗

Winter Fruit Salad🍊
Oranges, peeled & chopped
Strawberries, halved
Kiwis, peeled & quartered
Blueberries
Pomegranate seeds
Orange Poppy Seed Dressing: 1/4 cup orange juice + 1 1/2 tsp honey + 1/2 tsp poppy seeds

1. Add all of your fruit to a bowl & drizzle your dressing over the top. Toss your salad until everything is coated.
2. Keep it chilled in the fridge until you’re ready to serve!
