Key Lime Pie Protein Balls

A healthy spin on traditional key lime pie! These protein balls are incredibly flavorful, zesty and loaded with tons nutrients!

Snacks on snacks on snacks! That’s pretty much what I think of whenever I hear that it’s back to school season. (I was a HUGE snacker back in the day, but now not so much.) Except when it comes to protein balls! I love experimenting with flavors for these because it really seems like the possibilities are endless. AND every now and then you come up with a winning flavor that you just can’t stop thinking about. That would be these key lime pie protein balls!

Why do I love making protein balls?

Like I previously said, I’m not a huge snacker. But Charlie (my fiance) is so these are always great to whip up for him during the week. Plus most recipes only call for 5-6 ingredients , all of which I usually have on hand. (And did I mention, all CHEAP ingredients too?!) Easy + cheap + tastes freakin’ delicious = a win in my book!

Do I have to soak the dates?

Most recipes don’t call for it, but I personally prefer it. I think it makes everything a little easier to blend and also adds a little extra moisture to the balls. That being said, you can definitely skip this step too!

Can I use different nuts?

Absolutely! I used almonds and cashews because they’re a little more plain tasting than other nuts, but feel free to use your favorite instead. I imagine pecans or walnuts would be fantastic with this too!

How do I store protein balls?

So easy! Just place them in a ziplock bag and keep them in the fridge until you’re ready to eat! They should last for about 1 week. I would NOT suggest freezing the though!The texture is a little off after they thaw.

Other tidbits about these balls

  • They’re Paleo, Whole30, Keto, low carb, vegan and vegetarian! (Basically anyone can have them! 😉 )
  • They’re made without using gobs of peanut butter
  • They’re made without oats
  • They make for a great snack, grab and go breakfast or even a healthy dessert!

Key Lime Pie Protein Balls

Tangy, naturally sweetened and loaded with tons of nutrients! Your family's going to love this healthy spin on a classic dessert!

Servings: 23 balls

Ingredients

  • ½ cup almonds
  • ½ cup cashews
  • ½ cup coconut
  • 2 limes, juiced
  • 1 Tbsp lime zest (from about 2 limes)
  • 9 dates, soaked & pitted*
  • ⅛ tsp salt

Instructions

  • Place the almonds, cashews and coconut in a food processor and pulse until they're finely ground.
  • Add the remaining ingredients and pulse again until smooth.
  • Take 1 Tbsp of mixture and roll it into a ball. Place on a tray that's been lined with parchment. Repeat with the remaining mixture until all balls are formed.
  • Sprinkle extra lime zest over the tops of each ball before storing.
  • If rolling in coconut: Pour coconut shreds in a bowl. Take one ball and roll it in the coconut until all the times are covered. Set aside. Repeat with remaining balls.

Notes

*I always soak my dates for at least 30 minutes in hot water before adding them to the food processor. You can skip this step if you don’t have time but I think it makes the mixture easier to blend. 
To Store: Place them in a ziplock bag and store in the fridge until you’re ready to eat. These should last for 1 week.

Loaded Holiday Peanut Butter Cookies🍪
1 cup @peanutbutterco white chocolate peanut butter
1 cup almond flour
1/2 cup pumpkin purée
1 egg
1/2 cup coconut sugar
1 tsp cinnamon
1 tsp baking soda
1 tsp vanilla
1/2 cup dried cranberries
1/2 cup white chocolate chips
1/2 cup semi-sweet chocolate chips

1. Whisk the egg in a large bowl. Add all the other ingredients & stir then together with a large spoon. (For the best results, refrigerate the dough for 30 minutes - 1 hour.)
2. Roll the dough into 1 inch balls & place them on a baking sheet lined with parchment paper. Flatten them slightly & press a few more chocolate chips on the top of each cookie.
3. Bake at 350 degrees for 10-12 minutes. Let them cool on the sheet for 5 minutes before taking them off.

I love appetizer parties! But don’t you hate it when you show up & all they’re serving is chips & crackers?!🥴 (Like I get that it looks pretty Karen...but it’s dinner time & your girl is hungry!😬) That’s why whenever I’m hosting I always try to serve at least one heartier appetizer & no one can resist a good meatball...especially these!😋They’re a little spicy, moist, easy to make & filled with all that cheesy goodness! (And even have a serving of veggies too!)
Idk about you, but I’d take these over chips & dip any day!🤗

Pumpkin Parmesan Meatballs🍝
1 lb ground turkey
2 Tbsps pumpkin purée (not pumpkin pie filling)
1/2 onion, chopped
1/4 cup + 2 Tbsps Panko breadcrumbs (can substitute gluten free breadcrumbs)
3 Tbsps shredded parmesan
2 Tbsps water
1 egg
1 Tbsp Italian seasoning
1/4 tsp garlic powder
1/2 tsp salt
1/8 tsp pepper

Pumpkin Sauce: 1 15oz can tomato sauce + 1/4 cup pumpkin purée + 1/4 cup chopped onion + 2 minced garlic cloves + 2 Tbsps Italian seasoning + 1/4 tsp salt + 1/4 tsp pepper + 1/4 tsp red pepper flakes

1. Combine all the sauce ingredients in a pot & heat until warm. Set aside.
2. Combine all meatball ingredients in a bowl. Form it into 1 inch balls and place them on a baking sheet that’s been lined with parchment paper.
2. Bake at 350 degrees for 25 minutes.
3. Once they’re done, put the meatballs in a large pot or crockpot & pour the sauce over them. Heat until they’re warmed to you liking & serve!
