Put a fun spin on your pizza night with these fast and flavorful flatbreads! They’re easy, loaded with veggies and hit the spot every single time!

Pizza or salad… Pizza or salad… Ugh, don’t you hate it when you can’t decide?! Well now you don’t have too loves because this easy Italian chopped salad flatbread has it all! Crispy crust, zesty marinara and a fresh and flavorful salad tossed with the best Italian dressing to tie it all together! It just doesn’t get any better than this for a delicious weeknight meal!

Ingredients
This is definitely one of the easiest meals I’ve ever made and it was so good too! All you need are the ingredients below!
- Salad fixings: Make sure to chopped your salad ingredients into small equal sizes. This makes it easier to cut and eat once they’re on your flatbread.
- Italian dressing: I love using a homemade dressing for this flatbread but feel free to use your favorite; store bought or homemade. (Recipe for my Italian dressing is below.)
- Marinara/pizza sauce
- Flatbread or Thin Pizza Crust
All I did was crisp up a flatbread in the oven, toss together a few ingredients for a salad, spread some marinara over the crispy flatbread and then topped it all off with my salad. How easy does that sound?
What kind of flatbread do I use?
I personally prefer using a thinner flatbread for this recipe but you can use any flatbread/pizza crust that’s your favorite too! My personal favorite brand is Brookyln Bread Thin Pizza Crusts. (Not sponsored, I just really love their flatbreads!)
- Tip for getting a crispy flatbread: Use a pizza stone! This works wonders loves! I always put our pizza stone in the oven AND THEN turn the oven on so that it’s preheating the stone while I prepare the rest of my ingredients. When the oven’s ready, I just place my flatbread on the stone and bake it according to the package directions. It comes out perfect every time!

How to make an easy Italian dressing
Even though I love making my own dressing, you can definitely use your favorite store bought dressing instead too! Here’s how I make my dressing below:
- 1/3 cup extra light tasting olive oil
- 1/4 cup red wine vinegar
- 2 garlic cloves, minced
- 1 Tbsp Italian seasoning
- Salt, to taste
Just whisk these ingredients together in a bowl and pour the dressing over your salad right before topping your flatbread.

Other salad mix-in ideas
One of the best parts about this recipe is that it’s completely customizable! (Which makes it so much fun for a family dinner night too! 😉 ) If you don’t like any of the salad ingredients I used, then you can simply swap them out for a different ingredient that you love! Here are a few other ingredient ideas that would taste amazing on these flatbreads too!
- Chopped chicken
- Chopped pepperoni
- Chickpeas
- Artichoke hearts
- Sun dried tomatoes
- Sliced mushrooms
- Bell pepper/mini peppers
- Cucumbers
- Feta cheese

Italian Chopped Salad Flatbread
Ingredients
For the chopped salad pizza:
- Lettuce, chopped
- Salami, chopped into thin cubes
- Grapes tomatoes, chopped
- Red onion, chopped
- Pepperoncini, chopped
- Black olives, sliced
- Parmesan cheese, shredded (optional)
- Marinara or pizza sauce
- Flatbread crust (or thin pizza crust)
For the Italian dressing:
- ⅓ olive oil
- ¼ red wine vinegar
- 1 Tbsp Italian seasoning
- Salt, to taste
Instructions
To make the dressing:
- Whisk all the ingredients together in a bowl and store it in the fridge until your ready to use it.
To make the flatbread:
- Bake your flatbread according to the package's directions. (I baked mine at 400 degrees for 4-5 minutes.) Once it's done, let the crust cool while you prepare your salad.
- To prepare your salad, toss all of your salad ingredients together with the dressing and set it aside.
- Spread a small amount of marinara/pizza sauce on your flatbread and top it with your salad.
- Cut and serve immediately!
